Hey Matt, I followed this recipe for the most part, tonight, and man it hit the spot. I am currently on the keto diet, so I skipped the flour. Added a little xanthem gum to slightly thicken. Buddy I gotta tell ya, I really like what you're doing here. So entertaining. Cheers!

Lol! I completely feel the peeling shrimp as your first job. Though I was a dishboy mainly they had me peel shrimp for a good hour of my "downtime" daily (usually between 10:30-11:30) lmao. The memories of coming home as a sweaty shrimp-smelling fifteen year old won't leave my mind

im thinking of doing something simmillar to the end result you got there, i have some noki and regular mushrooms , shrimp,haddock fish fillets and some shrimp shells i saved up to do a stock ,never had nioki before and first time doing a shrimp stock ,wanted something perhaps like a clear soup or a creamy one like yours with white wine ,my dad used to do a cream of mushroom sauce with wine but i dont know what he did not to make the cream break and curdle with the wine so it was always a mess doing that for me, but im thinking of searing the shells in a pot with some oil,a bit of garlic ,onions and white wine and water perhaps some aromatics as well and reducing it down for flavor and adding the seafood last few minutes to it, then sautee the mushrooms in butter flour and cream for the sauce and putting all together but worried about curdling
