Learned a new technique of rice cooking, fried rice.

Good technique, people forget nowadays to make stock etc out of prawn shells etc. I shall try your toasted rice method. Doing the eggs first, I actually do a small omelette and cut it up but same principle, is easier as the egg is already cooked so just tip it in. I learnt a new word too, fond ... I shall impress my wife with that.

Thank you! Let me know if toasting the rice works for you, I like it because it adds flavor, it saves water (by not rinsing the rice) and time especially if you don’t have day old rice and want to make fried rice quickly that’s not sticky. 😁

so what happen to oyster sauce and soy sauce mix? no chicken powder or oyster when you cook fried rice? thanks

Hi @Gblove, the oyster sauce/soy sauce mixture went in at the 6:11, sorry the caption went too fast. No chicken powder here, I chose to have more of a seafood flavor in this rice, so I chose to get that flavor from boiling the shrimp peel and adding dashi powder instead. You can always substitute it with chicken bouillon if you like. Thanks for your comment and watching!
