Pranamam The Vahana of Ganesha i have heard another beautiful explanation. Sitting at the mooladhara, the kundalini shakti needs to move up to the Agjya Charkra and who is better than a rat to pierce through other than the Rat, Ganesha sitting on the rat escorts Sakti through the different Chakras easily.
