I think that the idea was that, in our lives, we will always need to spend at least one type of resource to get what we want, to achieve our goals. As time was the only resource they could have used in that situation, Simon is willing to use an amount of his resource, while his friend would rather save it and not invest the resource to get something. One wants to invest in what he desires, while the other one saves because his desire is not as big as Simon's for that bagel. Indeed, it was subjective and time is indeed the most valuable resource we have, you're right, but the question that Simon tried to highlight, in my opinion, is "Are you hungry for something so you only focus on the opportunity?". ^_^

Mistakes are very normal in life so when you make a drastic mistake, the best thing to do is learn from it and quickly move on because living in the past would only destroy your future.
