I have been watching Monsieur Pépin since I found him several years ago on KZbin. I’m older now and there’s only two of us at home and he gives us the best recipes for two people, simple, healthy, things that I have always wanted to try, and easy to make. This man is truly the King.

Broccoli salads were big in the 70s. I had an older neighbour who renewed my acquaintance with them and make one as well. I don't cook the broccoli at all and add raisins or dried cranberries, scallions and make a mayo red wine dressing as well. The Red wine vinegar was my change to it as it suits the broccoli better than white vinegar. You know what it's always the first bowl to be emptied at the dinner table. So good.

I mix Balsamic vinegar with a little bit of sugar, and add to the mayo. Diced red onions and chopped bacon.

I have to cook the vegetables otherwise I am not getting all the protein from the vegetables, same as with carrot, turnip, onion etc. And I find the raw vegetables are hard to digest

I use to throw away the stem of my broccoli until Chef Pepin showed that I could trim it and eat the whole thing. He's right. It is the best part!

Love this simple recipe. Tried it out today. The only thing I added is some dried cranberries. It’s beautiful, pungent, and unique as it is, but the sweet/tart of the cranberries gave it a little something extra and helped me spread it further :p

I used to love it, but in the US at least they add some terrible chemicals to it now. Never needed them before so I do not understand that.

I can't eat spicy stuff, whst would be good substitute for the garlic chili oil? Maybe just some crushed garlic and paprika oil microwaved for 30 sec?

Yeah, paprika should work, smoked paprika particularly could give this a really nice touch. If you still wanted a tiny bit of spice, pinch of cayenne should give it an edge but be way less spicy than the chilli oil

It's sold in every market in the US all year round. It's generally planted in early to mid spring for a mid summer harvest, or in fall for a winter harvest.

I used to love Hellman's mayo, but now it contains some genuinely terrible chemicals so I can't go near it. That's a shame, had a very nice flavor.

This is a great point! You could always omit the sriracha to make it more mild; in that case, I bet Jacques would add a little squeeze of ketchup to bring that touch of tomato flavor to the dressing. - CC from JPF
