I have been wanting to make the keerai kootu for a loong time, but I had to wait until my Amaranth came up this Summer. So today I tried it with two minor variations - i added a lot more chilli (per my taste) and I left out the tempering. This was because I wanted to taste the original flavour in my very own, garden-grown keerai! It was wonderful - I had just plain keerai kootu and rice, and now I am cooking rice again to have it for dinner! Many thanks and pranaams at your feet. You are a precious gem.

I have used Sona masoori raw rice.You can use Basmati rice. Reduce the water.For 3 people you can take 11/2 cups rice . Rest of it is same
