Totally agree! I use a company called Zenb made fro 100% yellow peas. High in fibre and protein.

Absolutely. I'm vegan but I'm also heavily into powerlifting and bodybuilding. A high protein pasta makes all the difference!! I used to worry when I was a meat eater that I'd never get enough protein a day if I stopped, I now hit around 130g protein a day without any animal products. Best one for me is red lentil pasta, add in some tomato and basil sauce, lots of veggies, scrambled tofu and some roasted chickpeas for texture and bite and I'm in heaven.

@@sloeginandsleep1170 chickpeas are the nectar of the gods to me lol. The most versatile of the legumes in my opinion. I'm not vegan but I'm environmentally and ethically conscious so I'm working towards vegetarian and especially with the grocery costs today I'm more focused on plant based proteins than ever. I can't eat any of the beyond or impossible products unfortunately, but I tolerate and actually LOVE tofu.

I'm not a student, but have been struggling with my mental health and helping to support others in my life. During these times, I never want to cook, so comforting but simple meals and ingredients are what I need. Top tip: when you cook pasta put a vegetable stock cube in the water with it. It tastes amazing and once you’ve done it you won’t do it without it I promise. It adds such an amazing flavour to the pasta dish

Yum! The last dish is so similar to something my mom made all the time when I was growing up. I would recommend adding a bit of cocoa to the sauce (look up recipes for mole for inspo), and using corn tortillas instead of wheat ones.

Mexican American here, and I think your inspired dish looks wonderful. Can't understand why people get bent out of shape over food descriptions. I've read it, but it seems like a waste of time. Have you ever done a video on starting up a basic vegan kitchen? A basic beginner's pantry staples, perishables, small appliances, sort of thing? I've seen the everyday shops, but was inquiring more after a setting up a vegan kitchen.

I make a similar casserole. I soak the tortillas in enchilada sauce then layer those a mixture of cooked quinoa (made with broth)+ a small can of sliced black olives + 1 small raw diced onion + 1 can rinsed black beans + chili powder + garlic powder salt and pepper + diced deseeded jalapeño+ cheese then repeat ending with sauced tortillas. Bakes 40-1 hr at 350F / 160 fan

Haha about the "that's not a sausage" thing. My uncle has been a meat salesman and I have to argue with him at every family BBQ. My comeback is "Well, the word doesn't have anything to do with it's contents, it is the freaking form of serving the thing - the form, dough -.-" Don't know why he is insisting every time when he's actually the professional. My dad on the other hand loves my meatless options because they don't need to be cooked specifically, just be a litte brown on each side :D

I too came across Jambalaya during my bachelors at Uni and fell in love! I make it all the time! Also, top tip for those feeling they want variety on a budget but can't afford to buy more types of veggies (either due to money or storage) I 'tricked' myself into thinking I had more variety by chopping my veg different ways within the same meal - ie. half of a pepper in strips, the other half in chunks ☺️

I've made a similar mexican-inspired lasagna since my college days, but with corn tortillas and my favorite salsa. And sometimes I've cooked salsa together with some cumin, thinly sliced carrots, and cauliflower cut up small, which adds a nice variety of veg to it. I have also made a kind of casserole with refried beans on the bottom, salsa and stir fried veg (carrots, cauliflower, bell peppers, corn) on the next layer, then covered with cornbread batter on top and baked until the cornbread is done. I use masa harina and all purpose flour to make the cornbread batter. It's got a bit of a Tex-Mex vibe and super easy.

I love the red pepper pasta! So creamy and you can also add some fresh red pepper to the pan with the onions. Perfekt if you have one laying aroung thats looking a bit sad because it gets blended anyway :)

Just a tip, if you are adding ketchup to dishes I would recommend adding it while you are roasting the veg before you add liquid so that the ketchup has a chance to caramelize, it adds so much depth of flavour 😉

All yummy. I live in Los Angeles and Mexican Lasagna here is with lasagna noodles. When it's with tortillas, it's a casserole. I make it in my tiny slow cooker that's the width of small tortillas - I just layer until 2/3 full.... Now, I want a Mexican casserole - too late for tonight's dinner! To be truly uni student friendly, you should share microwave low-budget meals.

The word “meat” literally means “solid food” hence why back in earlier days desserts were called “sweet meats”. People who think “meat” has to be a dead animal whether in a sausage or a burger or whatever are just ignorant of the meaning of the word. You can buy Red Wine/White wine stock cubes in Tescos and Morrisons for £1 (think you get about 6) Adding one of these cubes to Jambalaya takes it to the next level

Can you name the brand of sausage again, not sure what is comparable in the USA. Love all the recipes and will def try them even at over 70 they appeal to all ages on a budget. What vegan cheese melts well too. My 10 yr old grandson is gluten, soy, dairy intolerant . Not sure how to use nutritional yeast in recipes. Love Roxy!
