Single or Double Quotation Marks?

I've been introducing a bit of new grammar in my written works; My usage of quotation marks is like this: (“”) Double quotes for changing the speaker of the text inside the quotation marks. As in : Pedro said “I want to go hiking.” He was selling “fresh” fish. On both ways, it's as the speakers of those fragments are someone different from the speaker of the phrase. On the first one, it is Pedro who wants to go hiking, on the second one, it is the fish seller that said the fish was fresh. (‘’) Single quotes for literal highlighting. I like apples → you like a type of fruit. I like ‘apples’ → You like the word ‘apples.’ It's pretty intuitive once you start using it.

So basically, if someone said something and i'm para-phrasing them (but without the para), then it's double quotes, otherwise it's singles. And nested stuff just use the leftover sign

How about if you’re mentioning a name of something in British English? For example: Everyone on the Meet the Team page has been added. Would we use single quotation marks for Meet the Team or can we leave it just capitalised.

How about if there is text on a sign or something would it be ‘no dogs’ the sign read or “no dogs” the sign read

'No dogs'. Either is okay, but since you are quoting a literal (text) piece, this is the better option.

I use singles just because I picked it up programming. I did the same with some inequality signs as well, which got me in some trouble in math. 😂

You'll find that about English vocab a lot -- very inconsistent. Everyone might use a certain word one way, and even the academic works have to wrestle with this balance of sorts.
