Many thanks for sharing with us your recipe. Your culinary skills are very adaptable ft family style cooking and always delicious. I would just like to share with you the following: There's are 2 species of this fresh water fish. The name of this fish in English is known aa Tilapia. In Malaysia and Singapore, the original species is Black. The one you just cooked is mixed breed of some other fish and I heard it's from Taiwan (though no solid proof!), I have seen and eaten a mixed breed of the Black Tilapia and Luo Han fish. The Pink color Tilapia are sold alive swimming in an aquarium at Seafood restaurants and can demand higher price, while the Black Tilapia (sleeping) are sold in the wet market at lower price. Both are meaty especially above 800 grams and above. Maybe you would like to experiment steaming it with good quality soya sauce (known as Hong Kong steamed here) or fermented black beans with some sliced chilli (more to Malaysia and Singapore cooking recipes). This is to cover the muddy taste of the fish if breed in a pond. Of course there are Black Tilapia breed in moving (live) waters that tastes much better without the muddy taste. Thank you again.
