Tamarillos - when I was a kid here in New Zealand, we called them tree tomatoes. We would cut them in half, sprinkle sugar on top, and scoop the flesh out with a teaspoon. Yummy! 😊

I'm actually in the middle of cookin sinigang for my family right now(still simmering for another 20m or so) Mine is a combo of pork belly, swai, and baby cuttlefish, what I love about cookin sinigang is that I can show my fiance and his family Filipino cooking and connect with my heritage like Chef John had also mentioned. Makes me especially proud when my Fiance and his family say they love the food

It's hard to mess up cooking sinigang. But extra points to you for being resourceful to try out other possible souring agents. Yours wins the best presentation too. The broth has the best color of the three. As for taste, I can only imagine. I like all protein versions. Patis is de rigueur in enhancing the taste of the sinigang dish. It brings out the umami flavor of the protein used. Best patis brands are MegaChef (with 30°N designation), and 3 Crabs (with °40N). *The notations 30°N and 40°N are measures of nitrogen content (i.e., protein), and are good indications of the richness of the umami flavor. The two brands mentioned are the most expensive patis in the market. 3 Crabs is twice as costly as MegaChef, but I find the latter just as good and tasty.

I craved and just made sinigang yesterday! Only used what was readily available, nothing fancy; Sinigang mix, onions, tomatoes and spinach. Browned the pork chops first. Add water, tomatoes, onions and sinigang mix. Let it simmer. Add spinach a minute before serving. Et voila! Nothing fancy, fast pork chops sinigang! Made by cook Lurhen😛, Pinay-French Canadian here!

I make my beef sinigang almost exactly like chef Tom Cunanan. Winters are brutally cold here in Canada so sinigang is a life saver but finding fresh tamarind is almost impossible, at least where I live. One time, I didn't realize I didn't have limes for my sinigang but I didn't want to go outside because it was snowing. I had left-over tamarind puree from making pad Thai so I thought, hey what if I use tamarind puree instead. It turned out beautifully and use it regularly now.

I usually sautee the essentials: garlic, onion and tomatoes, then I'll add the meat (pork, chicken, beef) and I'll add some fish sauce and hugas bigas. Let it boil for sometime until fork tender. Add the tamarind concoction (or sinigang mix). Taste and adjust the seasoning according to your preference. Slowly add in the vegetables, let it become soft a little. Boil some more and done.

Using tamarind pulp block (available in thai food stores) is the best way in making sinigang... Kaysa gumamit ng powdered mix... Promise!

Last Saturday I went to farmers market and found kamote tops which we use in sinigang back in the Philippines. I will try it with grilled side pork. Yummy!! Thanks for the recipe. When we make meat sinigang we usually saitee it with garlic onion and ginger prior to pressure cooking it. But never when seafood sinigang.

I think, the beef ribs sinigang, made by Your Friend, is Much sumptuous. Bcuz, I know, any dish done by sauteing, enhances food. Except Adobo done without sauteing is indeed 101% guaranteed aLready. I really like my taro to be like almost mush but still pretty intact with its particles mixed in to the broth making it a bit thick so i add it pretty pretty early before every vegetables.
