It depends on the area you fish and the certain times of the year when certain species get really hungry. Learning the fishes behavior. Some schools of reds want one specific bait at a certain part of the tide at a certain time of year. Variety and lots of time spent on the water is key to learning their behavior. I also do a lot of artificial fishing covering lots of ground with a trolling motor. And I’ll find a lot of fish in different areas that way. Cut ladyfish or cut pinfish on a jig head is a pretty sure bet for redfish. If they are around and hungry. They’ll sniff it out and eat it. Sometimes you can get them fired up by chumming pilchards like in this video. Once they start hitting the chummers on the surface. It’ll be instant hook up with a pilchard on a small 1/0 circle hook.
