I went to college in Bradford in the UK. Bradford is widely regarded as the best place to eat Curry in the UK. I got used to that style of Curry (from Pakistan I think), and this is the closest home made Curry that I have tasted to a Bradford Curry. This is an excellent recipe, so thank you so much for this. By the way, I noticed that there is no ginger in the recipe, but it works well without it.

Questions - 1) Does cooking on high as recommended overcook the potatoes? 2) Would adding ginger, dry mango powder and crushed kasuri methi be alright for this recipe? 3) Can small-ish chicken drumsticks be used if thighs aren't available? Thank you for the recipe! Definitely trying it tomorrow.
@MyFoodStory5 жыл бұрын
Hey Apoorva, here are my answers - 1. No, it doesn't overcook potatoes 2. I highly recommend adding ginger though you can leave out kasuri methi if you don't have it handy (it does add a wonderful flavour though and if you make Indian food often, I highly recommend adding it to your pantry)3. Yes, chicken drumsticks will work here. I hope you like the recipe!

To be completely honest, Indian mothers dont exactly teach you to cook with measurement, you use portion that you feel like using while following some general ideas that you watch. The idea of exact measurements for recipes is a weird idea for most of us who learned to cook in the subcontinent when young and then came to the west.

Can we use chicken breast instead of the chicken thighs? Which brand of slow cooker you recommend please? Thank you for sharing. 💕💕💕
@TheMilesWeShare5 жыл бұрын
We've found that thighs are better because they have a bit more fat, plus if you get bone-in, the bones actually add fantastic flavor. You _can_ do it with chicken breast if you need to, but when we did it, it wasn't nearly as tasty
@MyFoodStory5 жыл бұрын
Hey Zahra, sure you can, but I don't recommend it. Simply because the long cooking process tends to dry out chicken breasts. But if you absolutely must, go ahead and use whole chicken breasts and then shred them in the end. I use a basic russell hobbs slow cooker that I love. If your curry is a little too watery, would it be totally mad to add some flour in there to bulk it out and give it a bit of viscosity or am I just talking like a crazy person?
@MyFoodStory4 жыл бұрын
Hey Ian! Ideally it shouldn't be too watery but if it is, you can mix a tablespoon of cornflour in 1/4 cup water and add that to the curry. Let it simmer till it starts to thicken. Though the best thing to do would be to simmer this down on the stove till some of that water evaporates.
