Ingredients
Mass of focaccia:
1 kg of wheat flour (all purpose flour, 10% protein)
2 tablespoons of sugar (30g)
1 tablespoon of salt (20g)
1 teaspoon of dry yeast (5g or 15g of fresh yeast)
800ml of water
1/4 cup of olive oil (60ml)
2 tablespoons of olive oil for watering (30ml)
Covering / Filling of the focaccia:
Fresh type mozzarella to taste
Cherry tomatoes to taste
Rosemary to taste
Coarse salt to taste
Olive oil to taste to finish
Baking dish dimensions: 40 x 30 x 3cm
Oven preheated to 220 ° C, bake for 30 to 35 minutes.
