Thanks Scotty. The PBC was the 2nd smoker I got. Have cooked some awesome food with it over the years. Not the perfect smoker for everything, but for Ribs and Chicken you can't beat the taste and how easy it is to use. Plus I love hanging meat on hooks! You should definitely consider getting one!

I just got a pit barrel cooker on sale at academy for $150 I also got ribs on sale I cannot wait to do my first cook tomorrow! This video helps a lot

I'm wondering if the meatier end of the ribs wouldn't be better hung at the bottom? They look awsome either way. We're in Palm Springs this weekend and the bartender darn near lost her mind when we offered our underage son a sip of our blended Lava flow. Lol. Like there was any booze in it anyways.

Hanging the meatier end at the bottom means you run the risk of the ribs falling into the coals as the ribs cook and gets tender. I have seem some people initially hang them with the Meatier end on the bottom, then after an hour or so rotate them to hang them the opposite way. Never tried that myself, as I am fine if the first rib closest to the fire is a bit crispy. Lol on the bartender! Here in Wisconsin I can take Kyle who is 16 years old to the bar and enjoy a beer with him. As long as he is drinking with a parent it is fine, and perfectly legal. Kyle has no interest of even trying beer, but I expect that will change sooner or later. How are you dealing with that heat in Palm Springs? Been there a few times, and every time triple digits on the heat. A bit too hot for my liking, but a cool city to visit. I hoe you had a great time!
