I'm smoking on an Even Embers ceramic egg pellet.smoker (love it), so dropping to 200 will take a while because it holds heat so well. Is it ok to let it roll at 225 after glazing? Maybe I should just go at 200.for the entire cook? Please advise.

In the middle of this smoking now. Beginning you said “1hr @225”... then bring down to “200, add glaze, set for 10mins or so or bring fish to around 145degrees”. At end of video you said “2hrs at 225”... then glaze, what did I miss?

Sorry about the mix up, cook it at 225 until you are 10-15° out from 145 on the fish, Glaze and kick to 200 until you hit 145

The 780 doesnt make smoke so how do you make smoked anything on it.? Yes i own one. Just regretted buying it

I've been doing some research on this as well. If you lower the temp to 165-200 degrees, you will get that smoke your looking for but it will also extend the cooking time which won't be bad at all. By doing this it just lets you meet absorb more. Traegers give off "blue smoke" which is smoke that circulates more inside than exits.....from the research I've done.
