The 2:1 pepper-to-salt ratio actually made me super happy on the inside. If you haven't tried this: do it. People say Turkey is bland, but Turkey is just a vehicle for pepper; just as french fries are a vehicle for ketchup.

2:20 The addtn of butter to the turkey in the smoker is pure genius; it not only helps to rewet much of that dry turkey (turkey is nvr not dry lol) and also just keeps the bottom from overcookin too

@@randomassortmentofthings This turkey turned out dry. All turkey turns out dry compared to any other meats without tons of effort taken. If your bagged turkey isnt dry its bcuz its been prebrined and soaked up tons of water from that; turkey is naturally always dry. You need to take steps to make it not dry, and its still dry compared to any other meat treated the same way. White poultry meat just turns out absurdly dry and thats nearly all turkey is!

Mr. S, I think you should definitely give this one an honorable mention redo at sometime, with added pork fat. Turkey is a super lean meat, so I'm a little disappointed you didn't intuitively add fat. But, kudos on the beautiful smoke job! You'll soon be not only Mr. Sausage, but Mr. Smoke, and when the moment is right, Mr. Smoked Sausage. Mrs. Sausage is lucky to have a man of so many talents.

3:00 i 100% believe this honestly. All the steps you took rly helped to bring it next lvl. I personally dont like turkey but wud smash yours for sure; tho you do show why i detest it, it takes fuss and/or special cookin tools to truly turn a turkey into somethin as delish as what you can get with a beef roast that you barely did any work to. Still an epic turkey, but imagine how rich and flavourful a quality beef roast treated the same way wud be; and tell me the roast isnt the one youd pick every time heh

Throw a little duck fat in with the sausage next time. Turkey is too lean so it will always be dry if you don't add some fat; that's why deli turkey is pumped full of water.

you probably want your turkey something like 15-20 degree under temp, and just check it while you're cooking it in the pan. Cooking it fully is just going to guarantee it's dry.
