I used to be a cook in a kitchen before I moved on to other things. I ALWAYS argue with my wife about leaving the skins on my mashers, and I’m glad you chose red skins too. They are the best ones for mashers, mad respect

Btw, if anyone objects to the "raw garlic" taste of them just being heated, you can drop whole cloves in with the potatoes depending how much you want them boiled. When I make garlic mashies, I peel a whole bulb of garlic, so close to a dozen cloves of varying sizes, just drop them in at the onset with the potatoes, and boil away. Drain, and the garlic mashes up sooooo nicely and just disappears into the taters, so it's wall-to-wall garlicky goodness.

That's what I teach ppl boil the garlic with potatoes it disintegrates into the potatoes while flavoring it I finish it off with butter heavy cream salt n pepper. It's smacking.

You should try roasting the garlic and then adding it in before mashing. Very sweet, beautiful taste.

I thought I was the king of cooking because I was from Mississippi and had been trained by my mom and grandma who were also from Mississippi but my Dad was from Toilette, Arkansas and was a cook in the 9th infantry 1957. They taught me all their recipes and secrets but what I just learned and experienced after having watched this video COMPLETELY BLEW MY MIND!!! I LIKED and SUBSCRIBED, please continue to teach, teacher! I only wish my Dad and grandmom was still here to taste what I made from your instructions. Use unsalted butter and put the whole stick in. When I make mine, I put two whole sticks in (for 5 pounds of potatoes). The potatoes are super buttery, but not overly salty, and you can easily adjust the salt level to your taste. Best little trick I ever discovered. If people aren't fond of the raw garlic taste, saute the garlic in the unsalted butter and pour it all in when mashing.

Oh, My, Gosh!! Your Mashed Potatoes Recipe is AMAZING!! Mama taught me to cook. I was making the family dinner for 5 people M-F, starting when I was 12. You can make your own chicken broth and buttermilk. I make my chicken broth using veggie scraps cooked chicken carcasses and chicken feet in my Instant pot. For buttermilk, use 1 tablespoon of either white vinegar or lemon juice for every cup of milk. Let it sit until the milk curdles.

Those look absolutely amazing. My only question is the broth. You appear to have about six dollars of a name brand stock in there to boil those potatoes. When done do you pour it down the drain or save it for use in a soup base or something.

Almost the same way I learned to make mine. A small tweak: Instead of salt, I add half a crushed chicken bouillon cube of a partial packet of ramen seasoning. I also peel my potatoes and keep them in a roomy bowl of water before cubing them up, but that is just a personal preference and helps to reduce the starch a bit.

Yeah, I always finely cube my taters (I'm impatient) and drop 'em into water, then rinse the shiite out of them just like rise. Less starch, not as "sticky".

My mother would sometimes make creamed potatoes like this but we never had creamed cheese. I always loved her creamed potatoes. I could make a meal out of the potatoes and cornbread alone. That was all I needed. Thank you for posting.

Thus recipe is so close to the one I use… I always use Yukon Gold potatoes though, and I add some sour cream too. Lots of salt, lots of pepper as well. Usually add some some cheddar in there too. Love your channel, have made several dishes of yours and have a bunch still to try!

Do yourself a favor, peel 1 garlic clove per potato use. Put the garlic in with the potatoes while boiling, mash, or run the garlic through your potato ricer with the potatoes. The garlic will be smooth and mash well. Delicious.

I made them and they came out almost perfect. My garlic press does not paste the garlic as good as yours so my garlic was a little chunkier than I would like and my bad, I like garlic so I tried to freestyle and added more than you suggested. My bad. That said, they came out creamy, rich, and yummy. Next time, I will get a garlic press like yours or roast the garlic and make it into a paste. Thank you chef for sharing your technique

I just made mine. I had ran out of chicken broth so I use a half chicken broth half beef broth and I used the other potatoes not red but I say it turned out perfectly like how you had did it

I will admit, at 68 yo, I have never made mashed potatoes. When in the military, the black women were on KP duty more than the others so cutting and peeling potatoes (SACKS AT A TIME), must have stuck in me (always bought heat and eat mashed potatoes). BUT, I'm charged with the mashed potatoes for Thanksgiving this year for 17 people. I'm going with this recipe so...counting on it to be fabulous! TY for sharing!!

Only changes I'm doing to this today is to cook and mash in half a fennel root, and steeping crushed garlic in the butter and buttermilk to infuse the flavor, then discarding the garlic.

I make mines the same but I use chicken cubes or the packet outta the noodles. I don't use cream cheese but imma try it. And I put some chives in them too. My son's luvs it. And I put the packet in my rice and grits.

Pretty much how I like to make my mashed potatoes, only two differences is I like to do roasted garlic (fresh is good, but roasted just gives it a little something extra) and instead of cream cheese we do a little mayo and butter. Seems odd but works really well and helps bring a creaminess to potato flakes that is hard to get with just milk and butter if flakes is all you have at the time.
