This is a full meal for me. Granny used hog jowls, onions (red and yellow)and sliced potatoes. Filled them full of pepper and added a pinch of sugar. Always served with oven baked hot water corn bread , broasted fried chicken, fried okra, turnip greens, egg noodles, roast beef, deviled eggs and mac n cheese. That was Sunday dinner at Bigmama's house!

I'm from TN. There were many great cooks in our area. They use Salt Pork in their Green Beans. They cook low and slow, with just a little onion. After 3 hours or more, add the potatoes. Add salt and pepper to taste. Plain and simple. Love Green Beans. May try this recipe. Thank you, GOD bless

I didn't use chicken broth or creole seasoning, but I made this same thing back in the day when I planted large gardens for my family. Just loved to pick from the garden and then come in and make this! Comfort food, and one of those dishes that tastes better reheated on the second or third night.

Yes, I too don't use the packaged broth or other seasoning mix. Just use my own spices, pure, not in a mix. This way I avoid the large amount of MSG (mono sodium glutamate) that's in these products.

I learned from a military man who cooked for the army that pepper was the key ingredient in everything including gravy. You can't use too much pepper. It gives things that flavor.

My aunt in Oklahoma bought baby potatoes and spen an inordinate amount of time selecting them. No stock, creole seasoning. She steamed the potatoes, onion and beans. So very good without all the extras.

I just made this today added pork hot sausage along with the bacon. But the game changer was sauteing the potatoes with the onions in the bacon fat, that is now my new technique Thanx AB.

This is awesome - I have some green beans in the fridge that I'm cooking today - same thing, with potatoes and onions, but I've never tried this sautee first method and it makes total sense because starting with a boil takes more to infuse the flavor. I can't wait to try this new method today which, I am sure, will become my fave! Thanks so much for sharing and love how you hit us with that mood music when they were ready - LOL!
