I want to thank you from the bottom of my heart for this recipe. I flossed on my family with this recipe on Christmas and everybody went nuts. I made gumbo for the first time this weekend. I used this recipe and subbed crab for chicken, turkey andullie for house made crawfish andullie, and used homemade stock. My dad, son, husband, and his friend ate it all within 24 hrs. I was in disbelief. My dad is a gumbo snob. So he’d have know reservations about telling me if this ain’t it. Excellent recipe. However, there is two things that I would change when I make this again. Before I add the shrimps, I would add the crabs and let them cook on Med-High, then add my shrimps last because the shrimps don't take as long to cook as the crabs. *(not letting the crabs over cook). And the second thing I would change, is cutting down the cup of Parsley to 3/4 cups. 👍Thumbs up to you!!!!!! 💙 PS: I agree with Kenny's comment, you have taught me how to cook during retirement.

AB...thank you for posting this amazing recipe. As an Indian, I had to make sure I didn’t turn this into just another curry 😄. Followed your instructions exactly, however it took almost 2 hours for me to get my roux to a darker colour...my fault, I was too nervous to do it on a slightly higher heat. It got darker, and then I lost my nerve to keep at it and get it to a dark chocolate ( all the time, in my head I could hear you say “ you gotta trust the process” 😂). I couldn’t get my hands on Andouille sausage, so I subbed with Polish Brats instead. Let me just say, this came out fantastic ! My family polished it all off. Definitely making this again.

Dude, I'm from deep south Louisiana and never in my life have I heard of putting the W in gumbo, nor do we put celery. We definitely do not put the king crabs either. We do put crabs, but the crabs we catch....the blue and orange crabs. And for it to be a true gumbo you gotta put more seasoning than that. Where is the cayenne pepper? I know they got it in the cajun seasoning, but you gotta add extra cayenne. Never in my all my cooking of gumbo''s, have I ever not cooked my gumbo for that short period of a time. You have to cook it to get all those flavors mixed. I married a yankee, and when we visit his people and I'm like, babe I gotta start cooking supper. His mama will look and say, well it's only 10AM, and my husband is quick to say....yes, but them Cajuns cook their food, they don't just warm their food, like everybody else does. Funny story, I was asked by a yankee to cook a gumbo for him and his family. I happily did. His daughter wanted to argue with me and tell me what I had just spent all day cooking wasn't a gumbo. I laughed and asked her what she knew about cooking one? Her response, well I cooked one for my dad. I was then told by this girl she got her recipe off of Pintrest and mine looked nothing like hers, so there was no way mine was a gumbo. Her daddy is the one that asked me to cook one for them. He used to be an over-the-road truck driver and was in south Louisiana many times. Needless to say, he ate mine until he hurt himself eating.
