This week we started to preserve some of the fruits of our labour, lots and lots of tomatoes! I decided to go the easy route and dry the first batch. Later this summer we will try some other things as well

New here? My name is Lea and I live with my partner Maarten and our toddler Puck on our land in Central Portugal. We left the rat race in the Netherlands in 2018 and moved south in our old campervan. Two years ago we bought land in Portugal that had been abandoned for several decades. After lots of hard work we now live in a beautiful yurt and keep ourselves busy growing our own vegetables as well as producing olive oil, wine and honey on a small scale. I make tomatoesauce every year without a pressurecanner, but i heard you can add some citrusjuice to be sure the ph-level is low enough for that. I also red a paper about botolism from a german institut (fraunhofer) that said, essentially, if you heat your canned food well, any botolism bacteria or poison from it gets destroid. I hope, thats helpfull for you too.

Thanks, that's interesting! Yes botulism is apparently the concern, but if it dies while cooking maybe it's not such an issue. I'll try to research some more

I also make tomato sauce without a canner. I make sure the jars and tomato sauce are hot. I heat the clean jars in the oven. Most of the lids will pressurise when screwed on. The ones that don't l put into oven for 5 minutes or so, until real hot. If still not pressurised, l rejar into another jar. Tomato sauce will last for a couple of years this way in the cupboard. I've never had a problem. I just use pasta jars ect with the vacuum lids, recycle them twice and then get rid them, the lids are usually past it by then. Greetings from Adelaide, South Australia

@@ourportuguesehomestead to kill the endospores by temperature a pressure cooker is needed. Checking pH (4.6 or lower) is fine too. Just tomatoes or some acidic additives (wine, vinegar) will likely be fine. There are either electric devices to check pH, or strips (available for sure at brouwmarkt in the Netherlands, but they are very common. Strips for kombucha are perfect since they cover the range you need for food safety) More importantly to add is that this also might be an issue for sundried tomatoes that still have the skin on. The skin is too thick to be penetrated by the vinegar bath. Although you likely are fine, best practice is to either keep your tomatoes dry and put them in oil days before use, or remove the skin before putting them in oil.

I am 67 years old and grew up on a farm in USA. I canned tomatoes with my mother when I was young and still can them. I have never pressure canned them. I just boil my lids and jars beforehand. My mother just boiled the lids( but rinsed jars beforehand with boiling water.)We use canning lids- often more than once and We could hear and see the rubber sided lids pop when it seals. 🍅 Thank you for your videos!🌟 Delightful!🙋

I also have never used a pressure cooker to can my produce. I use a canning pot with the rack to boil the canned goods. I buy aluminum rims and lids which helps combat the rust that forms on steel lids. I too boil the lids and rims but use my dishwasher to sanitize the jars. I've never had any of my canned produce spoil. If you don't get the pop as the lid pulls inward to seal the jar just redo the process. The airtight seal is most important to keep bacteria from forming in the canned goods.

Love that you show the tricky parts, the have-to-figure-out-what's-happening parts, and the "this worked" parts. You are right. A lot of places just show the things that work, and how they know it all, but don't share the realities of working with plants.

It's an absolute delight to hear the voices of your toddler and baby... makes me smile from the inside. You're doing remarkably well in such a short time. I'm sharing another couple of peeps whi have a huge following on YT . They don't have children and they live in Alaska .... that aside they need to preserve food quickly in summer-fall for their very long winters. I thought you may gain some helpful tips on preserving food from a couple who've tried and tested many different forms. You could speak directly with them via internet which can be very helpful . I try not to focus on the children too much, as I don't want the channel to be about them. And Puck will be going to school at the end of summer, so will probably be in the videos less. Hope you understand :)

I’ve used a water bath for tomatoes for years and hardly ever had a jar fail. Ball canning recipe book is what I used. Heat sliced tomatoes until boiling put into jars that had been in boiling water. Put on lids. Put filled jars into water bath with water to cover tops of jars. Process for time recommended for pint or quart. Remove from water, let cool away from drafts, store. You have such a precious helper, I love how she watches, then tries to do it, too. I really enjoy learning about living in another country and climate, thank you.

Nothing like fresh Tomatoes from the vine. I was a tomato picker for a few seasons, and I would just take buttered bread and a sharp knife. Id pick the ripest ones for me, that was for my morning tea and lunch! Farmer didn’t mind because they were too ripe to pack.

My Mom used to can tomatoes and all kinds of vegetable without a pressure cooker , so it can be done

The one thing you have shown very clearly is that growing your own food is hard work and you must be dedicated. We lost our tomatoes from blight. It has been a cool and very wet summer here. Great video

Your little shadow is so precious, everywhere you go. Yes my sun-dried tomato take five or six days. And baking soda will certainly help with the blight on your tomatoes. Great video, I just love gardening videos.

I LOVE your honesty in this video, I agree, gardening isn't always as easy as it may seem on youtube, especially not if you have little ones taking up your time too! Someone else here also referred to adding some acid (lemon juice/ vinegar/ citric acid) to the tomato passata before bottling it, which raises the acidity level enough to prevent any bacteria. I haven't done it myself, but have just last week read the same thing in an esteemed australian permaculture book. And lastly, your sundried tomatoes look great! I am not able to grow a large amount of tomatoes here in Wellington NZ as our summers are too cold for a good crop, but you have totally inspired me to get a large amount at the market in summer and drying them myself, maybe in a windowsil as sundried tomatoes are so pricey here!

If you have a freezer, you can cook a sauce and freeze daily portions in plastic bags, it doesn't take too much space, and you can have it ready in five minutes:)) Just flatten the bags before putting it to freeze.

In Malta I sun dry tomatoes in two or three days, sprinkling with a little sea salt, black pepper and that’s it. Once dried never add oil or they will go mouldy.

@@catarinatorres6378 yes, just a closed glass jar, not even in the fridge. If properly dried they will keep for a year or so. But still capture the magic taste of summer!

My wife and I bottle / preserve many bottles of tomatoes and cucumbers every year and I believe we are both still alive. We do not use a pressure cooker, we use the hot water bath method just as the Italians and most other cultures have done for many centuries. Do a search on italian tomato sauce...you will find some great videos on how to do it perfect every time. Cheers

for tomato sauce: boil/cook the tomatoes with salt and bay leaf, oragano...a.s.o and then put the sauce in jars. Put the jars with the lid on in a pot add water ( almost sink the jars)and put the pot in oven till the water is starts boiling (15-20minutes). Bain-marie. Take out the pot and cover it with a table cloth and let them there till next day. And VOILA!!!!! you have the sauce . I use sodium salicylate as preservative. I can buy it at the pharmacy

I tried my hand at canning tomato I thought I’d done well but one of my cans grew black mold on the lid, I used those lids for with the vacuum indicator later I was told that if you can add oil on top of the tomatoes to preserve them better

Sterilize jars, lids and utensils. Do not touch preparation with your hands after it's last boil. You can can in boiling water, if you put a towel or a plate, upside down, on the bottom of your pot. Once lids are closed, turn jars upside down, and put a blanket over them. That's how we used to do it ;). You can also can a preparation for tomato soup. In a jar, put few whole tomatoes, basil, garlic, etc. Cover loosely with a lid, and can as per Ball book timing for raw vegetables. Good luck.

I have made jam etc for years without a pressure cooker. I first put a pot of water on the stove to come to the boil. I washed the jars and then put them in the oven to keep hot till I poured in the jam. Once I poured the jam in the jars till the head space you needed I then made sure there was no air bubbles and then wiped the rims with vinegar. Put the lids on (if using the jam jars from the shops that you ate and washed them to use them, close the lids tight). Put the jars in the boiling water making sure there is about 2 inches above the jars, put lid on and depending on the sea level height where you live you can google this you boil the jam in the pots to the required time. I lived in South Africa and did 15 minutes, switch off the stove.. Take the jars out one by one and put them on a wooden board or cloth as they are very very hot, let them cool on their own you will hear a ping or pop sound and you will know the jars are sealed also the jar lids pull inwards. Let them stand overnight then put date on the lids and label them and then store. Good Luck hope this helps you..

Make cold tomato soups, like gazpacho, or salmorejo. You have all the ingredients and both are super delicious

waterbath canning works for tomatos just add viniger or botteled lemon juce or citric acid to bring up the accidety

Maarten’s man projects currently entail: doing the dishes, washing diapers and doing groceries. During the summer months we keep the big projects to a minimum because I can’t work with powertools or the digger because of the fire risk and it is often too hot to do alot. Currently I am preparing everything for the honey harvest next week. Cheers

I boil up the tomatoes with onion, garlic salt and spices then add a wee bit of vinegar and sugar. I whizz it up and put it in sterilized small bottles as a tasty ketchup.

Some of the plants had to be pulled but the majority has recovered after spraying them.

Per the co-operative extension in the US the tomatoes today are not acidic enough to hot-water bath can.

Smoked Tomato Soup, once I had this in a cafe and it was delicious. The employee I spoke to wasn't entirely certain of the recipe but they thought it was smoked dried tomatoes, a little brown rice, and tamari (soy sauce) put through a blender. Obviously there would have been some water. It probably was a vegetarian recipe. I do see recipes online for smoked tomato soup using raw plum tomatoes and chicken broth, probably a different recipe. They smoke raw plum tomatoes in a skillet. You can also buy smoke flavor in a bottle.

TOMATO jam in a vey popular Portuguese thing... frozen tomatoes are also very good for using to cook in winter... excellent in Portuguese baked beans - stewed chickpeas - carne guisada ... can be blended once thawed and made into a fresh tomato sauce.... delicious in stewed peas - stewed favas and a delicious Portuguese potato & carrot soup or a cabbage soup once the weather turns chilly.... freezing is super easy especially when the crop all ripens & you cannot process them fast enough... omg I LOVE Portuguese food....

I am also growing tomatoes , loads of trusses but so far only 2 red tomatoes! Your lovely tomatoes put mine to shame.Tomato chutney is delicious. I once made green tomato chutney when the weather was changing and not enough sunshine it is so lovely with curry's. I notice little Bo looking up at the camera acouple of times but he's still not mentioned in the info. He looks like he is growing so fast . Keep safe.x

Love what you do and how amazing you are doing this with a small baby and your little girl is so helpful🥰 it’s so true about the down side of gardening is the failures and can discourage someone who is starting up.I’m going to try the dried tomatoes 😁 I done chutney with my tomatoes last year 👍

You can try Salsa (with peppers & onions) a bit of salt, vinegar & water, boiled and poured over the chopped tomatoes & onions & hot peppers. A bit of oregano if you like. Garlic optional.

I love the "Bruschetta in a jar" recipe from one of the Ball canning books. Sorry can't remember which one. Also, my understanding is that tomatoes can be safely water bath canned. If you don't already have one the big Ball Canning book is a great resource! Lastly, I splurged last year on an All American Pressure Canner and I can't say enough about it. The thing is a tank! And it has opened up the option of canning any food I want, plus it doesn't use gaskets like most canners. So no parts really to have to replace.

for some of my problems with my tomatoes in the past, I used crushed egg shells to give them a dose of calcium and some epsom salt for magnesium.. This sometimes takes care of some of the blight you may have.. just make sure the egg shells are washed and dried completely, before crushing them with a mortar n pestal... see if this helps next round.. for potatoes, sometimes you get the biggest haul off the neglected plants..;-) lol

I know this is a year too late, but when you prepare your soil, for your flowering and fruit bearing plants, especially tomatoes, peppers etc, try putting some epsom salts in the soil for extra magnesium. Its a cheap additive and really does help to strengthen the plants. (Edit) I know you said you have South Africa roots, so try Tamatiekonfyt. A traditional favorite. 😀

The finished product looked beautiful. I see a coveted gift for friends and family in the future. Suggestion for what to do with tomatoes: if they are paste tomatoes make paste. I just found a recipe called squash caviar that calls for tomatoes and zucchini and/or squash. Since I have a lot of both I'm going to try it. I found the recipe on bon appetite but it sound like it's an ubiquitous Russian recipe so any version should be easy to find. I love watching the progression of your garden, good a d bad. I lost 3/4 of my tomato plants to blight this year because I didn't keep a good eye on them.

Yes, do the tomatoe chutney its wonderful. I just cook it in a large saucepan outside on a gas ring, no special equipment needed. Get a good seal on the jars and it will keep for years. You can use red or green tomatoes and put whatever spices you like in, I use different kinds each year, " variety is the spice of life. " never done the sun dried tomatoes but I'm sure going to do them now, thankyou.

You can make sauce from tomatoes just with a water bath canner. Add 1 tablespoon of bottled lemon juice to each jar. Tomatoes nowadays are not acidic enough to water bath can without the lemon. Don’t use fresh juice.

We just boil tomatoes and then freeze them they last forever to easy !I also dry my tomatoes in the oven on low heat and then pack them straightaway in jars filled with chopped garlic and vegetable oil straight into the fridge !Good luck with your drying !cheers from brisbane .

Our freezer is not always on so that wouldn't work for us, we need something non-electric :) Could do it in the oven as well, but don't want to use that much gas and the sun is free!

Yeah sometimes it must be hard living like that ! we are lucky that we have a solar system in Queensland where you get paid for the amount of electricity you put back in the grid . Also we use gas to heat our hotwater system and living on a 1000m square lot in the suburbs has its perks ! I also harvest rainwater and have a 12000 litre tank .Wens julle alle voorspoed toe ! Lekker bly .

Hi, sun dried in the oven 😂. I suppose it’s a way for those of us in damp drizzly countries like here in the UK. I have seen some videos of simple solar dehydrators that might speed things up.

What a wonderful video. Thank you and thanx to your very capable little assistant, she is the business. I saw you spraying baking soda on your egg plants, aubergine and brinjal in South Africa. Did you do this as a preventative measure or did the blight attack your aubergine as well? Keep the videos coming, I just love the simplicity of your lives....💕

Some of the bottom leaves on the aubergines didn't look so good, not sure if it's also blight, but that's why I sprayed them also

In trying to learn I came across a big debate on botulism. New american standards recommend pressure canning for tomatoes but everyone in Italy seems to do what you do. I'll just eat plenty fresh and make some chutney and see how that goes :)

Have you tried fry Green tomatoes Slice them in a quarter inch put them in flour and then in buttermilk with egg and then flour again then fry them in olive oil Cook them Until golden brown Put a little salt on them when done👍

Chutney is a great use & if you don't can sauce, then can the more acidic tomatoes/juice which will water bath just fine. Bet your sun-dried tomatoes will be yummy. 👍👍
