I love the simplicity of this recipe. I might even whip up a loaf for Paddy's Day. As far as this "Brown Cheese" is concerned, here in Brooklyn we call it "gjetost". It's delicious stuff. I don't have much of a sweet tooth, but this stuff has just enough of a savory balance that it's pretty much my favorite type of candy. However - and I've never heard of anybody else suffering from this allergy - it tends to make the roof of my mouth itch. Go figure.

+pwntmatch pretty much - a bit like gouda but melts in the mouth and a little granulated from the whey. Gorgeous stuff.
