Thanks for the recipe! It's the best cinnamon roll ive tried making, really fluffy. Just wish to share that the dough was really sticky and after kneading for about 14 mins it still seemed kinda sticky and rough, couldnt stretch so easily as in the video or form it into a smooth ball, but proceeded anyway. Also didnt roll out the dough so neatly and nicely, just as large as possible without breaking it. And it still turned out delicious! One tip is to oil the work surface slightly before rolling out (:

Thank you so much for the recipe! It was a pain in the ass to do it by hand without a mixer but I nailed and the result was exceptional! I only changed one thing - added cream to my buns before baking so they turned out extra gooey :)

Did it yesterday.Because I don't have a stand mixer I kneaded it by hand and it was very very difficult and took me too much time.... But the result... My god I couldn't imagine it was possible to make cinnamon rolls taste like the most amazing dessert. That trick with the milk and the lemon zest in the frosting takes it to the next level... ❤ I made these yesterday and will not use a different recipe moving forward. They are fluffy (I did not tight roll) and there’s enough filling to actually taste the cinnamon and have the perfect amount of sweetness. I opted for the lower sugar in the frosting and added lemon zest and juice which is delicious. Next time I’ll try a plain thin glaze, but I think these are delicious without any toppings. The roll has so much flavor on its own that the extras aren’t really needed unless you just like them. Also, I had to knead for longer than the specified time to pass the window pane test, so make sure you monitor your dough to reach the appropriate texture. ❤️

You can but it is a very stick dough. The best way of working it will be to use the slap and fold method.

Brown colour on the outside of the rolls? It will be due to the bake time, there's notes in my blog post on that :)

I was trying & already mix like about 30minutes but the dough won't come Together as "a dough".. so it is sticky & i can't even leave it ( you know like everything is stick in to your hand,). Hi, no butter is needed. Are you using a weighing scale and a stand mixer? If you at kneading by hand, depending on your kneading method it may take even longer. I suggest looking at the slap and fold method if you are kneading by hand. :)

@@ButtermilkPantry yeah.. i am using weighing scale & small stand mixer with the hook.. i then decided to add more about 20gr of the flour.. about 15-20minutes later the dough begin to united but can not make those thin layer like yours😭😭.. it's been like almost an hour then i stop& try to fermentation these (still not an hour yet,so don't know yet the result )..but i am going to try again with your recipe next week. Can I check if you had used weighing scale for the ingredients? If the dough is not smooth and tears really easily it may need to be kneaded for longer.

I tried the recipe again, adjusted some steps and the rolls are amazing :) used another brand of bread flour, and also activated the yeast first by mixing with warm milk and giving it 10 mins to bloom. Also added the flour in batches and cream cheese last, reduced milk to about 105g instead since Singapore is very humid!

Hi! I tried making these today and omg the mess! Not sure if it’s becoz we’re in a warmer climate but the rolling was a nightmare. The butter was liquidy and the brown sugar melted and by the time I cut it they all unravelled coz the dough at the end couldn’t hold onto any dry dough. Is it possible to do this in warmer climate at all?

Do you mean to bake it later? You can freeze the shaped dough for up to one week but I wouldn't risk any longer as it might affect the yeast.
