Hi friends,
Hope you all are doing good.
In this video,
I have shared how to make super soft and spongy Pav with homemade yeast.
If you are new to my channel , then kindly watch the process of homemade yeast first and then start making this recipe.

Ingredient
All purpose flour (Maida) - 2 cups (250gm)
Milk powder - 1tbs ( 7gms)
Lukewarm water - 1/4cup (60ml)
Lukewarm milk - 1/4cup (60ml)
Sugar - 1tbs (10gms)
Homemade yeast - 1/2cup (125ml)
Oil/Butter - 1tbs (15ml)
salt - 1tsp (5gms)
*Used 6*6 inch aluminium square tin.
*To Bake Preheat the vessel/cooker for 15 mins on medium high flame,
Bake for 18- 20 mins on a gas top oven on medium flame.
*For convection and OTG
Bake at 180c for 15 - 18mins
Few extra points,
*Used 1cup = 250ml.
*Can use any flavor less refined oil for this recipe.
*Make sure to use nice active yeast for the recipe ,
feed for at least 2 consequent days continuous and make the recipe the third day for better results.
*Use the yeast in room temperature.

Your recipe rocks!! this is the best recipe of ladi pav i have found till date!! My pav have come out soft but they are bit sour and yeasty in taste! how to improve the taste?

Hi, Try to use starter after feeding the yeast for 2 consequent days and use on the third day . This will speed up the proofing process. The reason for Sour taste in recipe is either too old or kept out for long ....try to store it in fridge immediately after feed ...if the yeast has turned sour then discard 90%of the starter and start feeding with remaining. 😊

Yaar ustaad ho tum tumhari home made yeast ki recipe superhit hai jaisa bataya waisa follow kiya yeast banane k baad use feed kiya phir dusre din bun banaya it came out so nice and koi yeast ki smell nahi pura ghar bun ki khushbu se mehek raha hai pic li hai share kaha karu batana

Hello mam For making this recipe did you discard the yeast and then fed it and after feeding did you keep the yeast outside , if yes for how much time and if not , did you put it back in the fridge and then took out before making buns .

Hi Sujata, Try to discard the batter first if you have excess and then feed the yeast. After feeding I immediately keep in the fridge. And next day take it out 1or 2 hours before I start the recipe , by then they will come to room temperature and will be nice and ready.

renuka baiju no need , fridgil nin direct eduth feed cheyth immediately fridgil vechalum no issues. Fermentation fridgil tanne nadanolum.

No , we need to keep a check on the dough . If kept overnight then the dough will turn sour .

Hi HUDA, if it’s sticking too much after kneading for 10mins after adding oil also then u can add very little flour to it. But don’t add too much ,else the dough will become dry. We need a soft and smooth dough here .

Y we dnt use metal cups for both yeast making nd dough fermentation bcz i dnt have glass jars.can i use metal?

U can use ceramic or plastic but don’t use metal , Even a Normal drinking glass can be used for yeast making. For the dough , metal can be used .

It will stay fresh for 4- 5 days outside the fridge. Cover it using a clean wrap or foil and store in air tight container.

Hi Vaishnavi, For cinnamon rolls follow the same dough of chicken dinner rolls , You can find the link in the description, Follow the same dough and in the video I have mentioned the measure you can use for the filling for cinnamon rolls.

Have a doubt.Suppose,I want to feed the yeast the previous day for the next day's recipe and refrigerate overnight and I want to make recipe afternoon and take it out from the fridge 2 hours before i make the recipe.Is my procedure correct ma'am

Hi , Yes , the same way , But try to feed for previous two days . And use next day for recipe , keep it out just 1 hours before from fridge that will also work . It’s shouldn’t be cold when using that’s all.😊

I made ladi pav, first proofing gave great results but after second proofing they became flat instead of rising in the oven, can tell where I went wrong ?

Hi, After first proofing do not knead the dough too hard , be gentle with it . And while shaping the dough to balls make sure to get a smooth top by pulling from the top to bottom and seal it down.

Go for 70 percent whole wheat flour and 30percent all purpose flour for better results

Use about 7grams if instant dry yeast..also adjust the quantity of water accordingly.

Yes , But then u will not get the same texture , Go for half part whole wheat and half part Maida.

Yes , there is another recipe which use eno for the pav buns . But that’s a different recipe and measurements are also different , we cannot just replace yeast with eno here .

Cover with clean wrap or store inside ziplock bag or cover with aluminium foil and store inside an air tight container .

Hi Ayesha, That will come when bake in oven , There the tin gets heat from top and bottom , here it’s only from bottom ...that’s the difference 😊 Try egg wash on the buns and cover the top of the vessel like how I did , that will give some change in colour on buns

Hi, Under kneading , under proofing of dough or less water content in the dough , If the dough is looking hard then feel free to add little more water to it and knead (like how we knead for chapatti dough) But for bread the dough has to be softer than chapatti dough. All these can be a reason for dense dough. Plz find where you are going wrong .

I made this recipe using your homemade yeast but it didn't turned out well...does the Yeast becomes less powerful by keeping it in the fridge for a week?

It does become less active after a week but feed them for previous 2 days and use on the third day for the recipe.

Mam.. I tried your both home made yeast and pav recipe but I take more than 8 hours to double in size but after that it didn't proof well ....it's turns sticky don't hold the shape

Kriti Tiwari 8hours is a long time to proof the dough , Try to keep in warm place to speed up the process time , else the dough will turn sour as well .

Cooker me banaya hua pav accha aur sponge ban jata hai par pav ke upar ka portion white he rahta hai brown nahi hota

Cooker me banane se upar colour nahi aata hai , because stove me bake karna se heat sirf neeche se aata hai . But oven me up and down dono end se heat pass hota hai and tabhi paav me upar colour aata hai

Nice recipe mamme...I have tried all your recipes...had one doubt...while making bread or pav with homemade yeast, dough doesn't rise properly during second rise...what could be the reason??

Hi @Hiral @sujata, If the dough is rising the first time perfect then it should rise the second time as well. Which means the yeast is in good condition. And problem is with the kneading after the proofing . Try to be gentle while kneading the dough after proofing or how you kept it for second proofing . Try to keep it covered like how I have covered the tin for pav bun and don’t keep it open like how showed in the video and see if that works . I kept it slightly open from side and placed inside the oven to proof for bread, which kept it warm. But you can try to keep it closed with cloth or clean wrap and keep for second proof.

I tried to use whole wheat flour for this . I didn't find much rise in my recipe. Is the flour leads to less rise?

Mam I tried recipe today but it was fail...I think its beacuse of yeast ....I made yeast tuesday , I feed it wednesday also., didnt feed thursday ....made recipe friday....but it was totally fail....I feel so sad....I want to try it again please guide me...

Do you have the leftover yeast or u used all of it ? If you have anything left then feed them for 2days before u want to try the recipe . And follow the recipe as it is .

Hi dianzz u write in ur recipes extra point number 3 at least 2 consequent continue make sure u use it after 3 days for batter results pls can u explain ur point i not understand ..

I meant feed the yeast for 2 days and use for the a recipe on the third day . Just an example: feed on Thursday once and Friday once and use for the recipe on Saturday. They will be just perfect to use for any recipe . Hope now you are clear 😊

Sonu Kothari yes , that’s fine but maybe it will take longer to proof the dough , That’s why I always tell to feed for 2days and use on third day for best results.
