Dumplings are a whole ritual, starting with their preparation and ending with eating. When and where the dumplings appeared, no one knows for sure. But similar in structure dishes - with a shell of dough and stuffing of meat, vegetables or seafood - have existed in China for more than a hundred years. It is simply impossible to pass by this legendary dish, so today we prepare minced chicken dumplings, tender and very tasty. I'll tell you how to make the perfect dough for dumplings, I chose custard dough, because it makes homemade dumplings a little looser. And for the filling we will use ready-made "Juicy" chicken stuffing.

Ingredients for dumpling dough:
500 g flour (+ for sawing)
250 ml of hot water
3 st. l of oil
½ tsp. salt
Ingredients for the filling:
500 g of minced chicken "Juicy"
50 ml of cold water
10 sprigs of parsley
½ tsp fennel seeds
butter, sour cream or vinegar to serve
salt and pepper to taste
Step-by-step recipe for dumplings
For the dough in a large bowl, mix 500 g of flour with 3 tbsp. l of oil and ½ tsp. salt. Pour 250 ml of hot water. Stir first with a spoon, then continue to knead with your hands. The dough should turn out elastic and resilient. Wrap the dough in cling film and set aside for a while.
For the filling, place 500 g of juicy minced chicken in a bowl. This is minced chicken leg meat, it has an incredibly tender and rich taste. Pour 50 ml of cold water. Wash 10 sprigs of parsley well, separate the leaves and chop them finely, pour into a bowl with minced meat.
Add ½ tsp to the minced meat. fennel seeds and salt and pepper to taste. Thoroughly mix the minced meat and beat it slightly against the bottom of the bowl in which you are kneading.
Saw a large board or work surface with flour, take half of the dough and roll out into a thin layer about 2 mm thick. The thinner the dough, the better. We will sculpt dumplings in two stages so that the dough does not get too weathered.
Squeeze the slices out of the dough with a glass, wine glass or a small cooking ring. I like small dumplings, so I used a ring with a diameter of about 5-6 cm.
In each circle of dough and put 1 tsp. fillings. Here it is important to keep a balance between the amount of filling and dough.
First, glue the edges like a dumpling, and then combine both ends, twisting into a dumpling. Form dumplings from the second half of the dough. It is better to spread them on a floured surface so that they do not stick and break.
Cook the dumplings in salted boiling water for about 3-4 minutes, until the stuffing is ready. Put the finished dumplings in a bowl and season with sour cream, vinegar or butter, add black freshly ground pepper to taste. You can not cook all the dumplings at once, put some in the freezer, you can store them for about a month.
