Definitely do the dishes while cooking. Once the pot has cooled it is 10x harder to clean. If you rinse/wipe while still hot it is quick and easy.

Yes, to tortilla on the open flame. That's how we do it in California if you have a gas range. Throw the tortilla on the burner grid and flip it with tongs until done to your liking.

You can get a camp cook pot with a steamer that fits inside so steam the spinach or vegetables while boiling the water.

as for camper food I just use ready made lyo packets with known calorie counts - say 500kcal for a beef stew - we have a local company here that packs it nicely and sustainably, I'm sure you have some local ones too. It's like real food, just dehydrated - you add hot water and boom, real food again.

Hard boiled eggs for camping! Great with Ramen!. I like to make soup or Dahl and freeze it. It acts like an ice block until it's thawed. Have you been to TTITD? Lots of amazing creatives doing the camping thing with style and shenanigans!

You can throw the spinach in the soup water just before eating, or put it in the bottom of the colander (drain water over it), or after draining water put pasta on top of it (put it at bottom of bowl). As for the egg either crack and stir into soup (like stracciatella) or crack egg whole on top of food and it will cook, or put it into soup liquid whole and poach it. One pot meal.

Boil rice noodles, in a not quite enough amount of water (because you won't drain off water @ end) add some quality beef jerky once boiling for a few minutes (Biltong turns out nice) once beef is tender, turn off heatt and add a big scoop of peanut butter garnish with crushed peanuts and a dash of red pepper flakes ...that's my go-to easy backpacker meal that isn't a pouch full of fart-inducing preservatives) ...do you eat beef?

I don't know about your diet habits but one thing we do for breakfast is a bacon & eggs burrito. It fills your belly, tastes good and gives you shit ton of energy. Grab the tortilla wrap, put some cheese in the middle. Fry 3 or 4 slices of bacon in the pan, with the same fat from the bacon, fry 2 eggs. Put the bacon and eggs on top of the cheese. Close the tortilla wrap like a burrito and heat it bottom and top. That's it, bacon & eggs burrito

Loving the new additions to the camper rig! That awning is a huge upgrade, and a cargo box like you mentioned would be sweet! Since you mentioned only using half of the roof rack for that, are you planning on adding some solar panels on the other side? Also, since you had some cooking issues may I suggest getting a second heating device/mini stove to the camper kitchen? It makes life so much easier when you can cook two things at once when you're at camp hahaha. Oh and since you mentioned how you like the idea of a canned cocktail you should check out the new line of canned cocktails that June Shine just came out with, haven't tried them myself but that might be what you're looking for.

Don't forget to dig your cat hole at least 200 feet away from a water source. You seem to be killing it with the camp food. I heard couscous is good because it cooks fast. You can even soak it in room temperature water.

DU is looking cool and a roof box would be an awesome addition. Great for storing wet kit to stop condensation inside the van. Does the rack whistle? That gap between it and the roof looks like it would. Some clip-on sides for the awning would make it super snug.
