My wife's cooking has changed over 51 years of marriage. In the early couple decades lots of veggies, moderately spicy hot, and American style breakfasts with bacon, eggs, and pancakes. Middle decades more cosmopolitan cooking after three years in Naples, Italy and Panama. She cooks decent pasta dishes and a great tuna fish salad. Later decades more meat, esp. fish, and less veggies. We dine out only a few times a year. My wife is critical of the quality and quantity. Some favorites are 'Gang Gy' with green curry sauce, Chinese doughnuts, Chinese brown eggs with pork, chicken with lots of potatoes, carrots, celery, more veggies which we call 'Airplane chicken', 'Jok' or porridge, bacon and eggs maybe once a week or so, and plenty of fish either tilapia, red snapper, white snapper. We no longer eat turkey at American Thanksgiving as GoT only allows pre-cooked Butterballs as they are protecting the Thai turkey farmers. Not so many restaurants here just south of Hua Hin. The quality and portion size is reduced due same price, new cooks, and whatever. I buy chili, butter beans, and Prego in cans.

My favourites list included Moo bot kap sataw (See my icon), shu-shee, which is Fish Paneng with loads of bai macroot, the green thinly cut leaf served with Paneng curry sauce. Masaman BEEF, and Gai tod met mamuang, with cashew nuts, Phat Krapow, and last but not least a northern speciality called Geng Hang Leh. I don’t like seafood or soups.

Sticky rice is common with meals in the north (chiang mai/rai) and north-east (Issan), not just desserts. BTW, I'll take your sticky rice and condensed milk while you can eat the mango Tim, as I became extremely allergic to mango after 25 years of eating it.

Food poisioning. I never got it in thailand. Only place I remember getting food poisioning is USA, Indonesia, France, and recently 4 months ago Japan! Yes Japan! I couldnt believe it myself because I been there about 10 times and lived there for 2 years and never got food poisioning until my last trip! I ate raw shrimp in Ao Nang Krabi and didnt get sick. I travel international every year and this year alone been to 4 countries (mexico, japan, malaysia, thailand) and of the 4 i got food poisioning in Japan. Go figure!

Never had Thai food in my life until I flew to Thailand for work in the mid 1990s. Whenever I visit Thailand I must have Spicy Papaya salad. 60 baht from a cart on Beach road in Jomtien, and many other places. When I was living there I would stop by the cart near the end of my bike ride for takeaway. So satisfying.

Big fan of the fruit in Thailand. I like the jasmine rice or Hom Mali, but try to limit the amount as i believe its quite high in sugar content. MSG is a thing. My wife hates it and rages against the prevalence it has in dishes. I dont eat seafood other than the odd prawn in a Tom Yum. This is a bit of an issue as the Thais just love the seafood. I do like noodle soup, Laab Nam Tok Moo or Kai, Pad Kaprow Moo, Gang Dang, Gang Kaew, Moo Menau. I also like Pa-Lo made with pork, but find many vendors make it very sweet. I dont much enjoy Thai deserts, they seem extraordinarily sweet to me. Fairly much anything you can cook at home where you can control the amount of salt and sugar is good. Maybe locals have become larger in general due to the type and amount of rice they now eat, and maybe pork and chicken is more available so they eat more of it whereas maybe they ate less meat and more vegetable before? Maybe more people can afford 'worse' food?

I think the sensible conclusion about Thai food and health, is that if you eat Thai food the way Thai's eat, that is massively different from the range and frequency of dishes that us westerners would likely consume. Just like British food is known for something like fish and chips, well if you eat that every day you'll die very early. But look at something like pad kha pao, in terms of nutrition, whilst the meat might be cooked in a pan, there is only a small amount of oil in it. Also, the ratio of meat to vegetables and rice, is also more modest than we would typically eat in the west. (Plenty of reports of us westerners eating far more protein and animal fats than we should). More than healthy enough. Plenty of other dishes of course to choose from as you've covered in the video, but I know that during extended stays in Thailand, eating predominantly Thai food every day, I've lost a decent amount of weight, for all the right reasons.

The thing I dont like about thai food is msg, sugar, and vegetable oil. Usually i avoid all these things in the US but on vacation I ate a lot of these but felt fine. I do notice pad ka prao was vert salty but I am ok with it because I sweat so much there 😂

The MSG hysteria is ridiculous. Its a type of salt that also exists in Nature in for example cheese and tomatoes (yes tomatoes). It also exist in almost all western prefab food, things like sauce/soup/stew free dried ingredient mixes, flavored potato chips and many many more. But its not listed as MSG, its listed as “flavor enhancer” or E621. Along with its close brother E622 Most people eat MSG every day without knowing it

Once in Siam it was not so easy to find, but then I was in Issan parts so I thought the towns/villages were too small to have that sort of restaurant. But Bkk was good for it.

Phanaeng curry is a very old Thai dish and has absolutely nothing to do with Panang in Malaysia. Wikipedia has recently been partly corrected but not fully. If the writer had actually read Mom Somchin Rachanupraphan's book Tamra Kap Khao, it would explain the true Kymer meaning of Phanaeng.

Incidentally, through watching the OTR channel.. Bangkok is amazingly cosmopolitan. Lots of immigrants, er, expats from all over the world, and they bring their food with them. Think of ANY cuisine.. BREAKFASTS - yes there are breakfasts which are preferred by the locals, mainly in rural areas, though, as city life doesn’t really have time for it. They generally like Tea or Old Fashioned Coffee (literally translated), Gow Thom, Patong Gor or Chao Koi in the south, with condensed milk dip, fried chicken with sticky rice and crispy onion, or Gow Mok Gai, the Thai equivalent of Chicken Biriani..

Apparently there was (and is) a lot of MSG in American processed foods such as canned soups.. the Ajinomoto Corp. sold MSG to the American food industry in 10 pound cans, but never sold it to the consumer as a condiment, as they did in Japan and Asia. This whole MSG skepticism began with a letter written to a medical journal by a Chinese American doctor, claiming he had symptoms after EATING AT A CHINESE RESTAURANT. I came across a video last month that pointed out that this came about because SOME Chinese (the Cantonese) had a pre-existing prejudice against the cuisines of other Chinese groups - the way it went was, these other groups used cheap ingredients and therefore used MSG to make up for the lack of flavor. It turns out the doctor who wrote the letter was Cantonese, and he specifically mentioned that the restaurant was a NORTHERN Chinese restaurant. MSG has gotten such a bad reputation that, when it's used in processed foods, they don't call it MSG - it's labeled as "hydrolyzed vegetable protein" and such. Soy sauce naturally contains MSG, it forms during the brewing process.

The last 15 years have seen a very strong influence of Western cuisine on the Asian population. We used to admire the beautiful slim figures of older women, and that's why they seemed so attractive and young to us - but today!! We are already seeing 15-year-old children with severe obesity. And gentlemen, you will surely agree that even 20-year-old girls are very far behind the line. You only need to open dating sites and the data is shocking when girls around 155 cm tall often state their weight as over 65 or more kilograms. And this is not at all an exceptional phenomenon. While walking on the Beach road, it is already difficult to find a slim, beautiful figure - that is, if you insist that you are looking for a Lady!

Depends what Thai foods were talking about. Lots of healthy options, especially when asking for less sugar. Most Isaan food is quite healthy. Namtok Moo, Laab Moo, Tom Sap, SomTum. All my Thai favorites except maybe Khao Kha moo is fairly healthy. Street food though in general isn’t very healthy The curries as well unless farang sugar versions are quite healthy. Noodles and Rice are obviously not very healthy though. Just pure refined carbs

And salt - the bad guy for your heart. From Google, the amount of salt in MSG-- "In particular, the US Institute of Medicine suggests using MSG as a lower-sodium alternative to salt and as a way to help food taste good." Both salt and MSG are used as flavour enhancers but MSG must be healthier.

I am seeing more fat thai people. I just assume they are eating to much western food When u combine eating a regular diet of western food with the excess sugar and rice (carbs) of thai food there will be more and more overweight thais and diabetics

55 years ago I saw few fat Thai people, the exception being a few Chinese, Indian, and Caucasians. Now I see many fat children and adults. Processed foods from 7/11 and other Western food outlets as well as more money to buy those foods. The CP burger isn't bad for the price of $1 as well as the ham and cheese. The latter has no crust which I prefer.

There is nothing that sets Thai cuisine above others. If you love to feel your taste buds melt in the heat so be it, but if you have subtle taste buds which pick out individual ingredients then the overuse of chilli will destroy them. If quality ingredients are used then Thai food (especially fish) can be fabulous. You are missing out about breakfasts, try Kai Katak! The problem is overuse of MSG, salt and sugar to compensate for lack of good ingredients and wok cooking, means inadequate cooking time to release flavours and tenderise poor meat. Indian food and Malay food easily matches Thai food. Its all good to try and find out what you like.

I was first exposed to real Chinese foord in Melbourn back in 1987 during my work at the TAA facility. We had an Asian dude in our team and he ordered all the food for the table about 15 people it was excellent. After that I was hooked, with all the video about the street food I'm dreaming of the day I step off the plane in Thailand.

Just about 90% of Thailand's food can easily be cooked in a single wok or an electric pot you can purchase from Makro, Lotus or any other supplier for BT299. I do it often perhaps 80% of the time I cook in my condo. You can nearly even cook with Western ingredients. Most can be cooked in 30 minutes. Most are different ingredients with 100 different sources from Lotus supermarkets. Chinese cooking is similar. If you cook it yourself it will usually cost only 1/3rd of a restaurant's price or less. But restaurants are still good. You can live well and cheaper in Thailand if you can cook a bit. 80% of the food I cook myself costs less than Bt 2000 a week and is good, and all very simple, 2 eggs for breakfast as french toast, loverly in my Bt299 cooker. It costs Bt20, in a restaurant Bt80, 5 mins to cook Any time you raise the temperature of any oil, any type of oil over 140 degrees, it then just becomes cooking oil, ref. CSIRO Australia (Govt testing lab). Olive oil is good as long as it is not hearted and is usually used cold on salads etc.

I went to a Thai restaurant in Melbourne. I spoke some of my poor Thai language and no one knew what I was talking about. After asking if my Thai was that bad, I was told that every employee was Chinese, thus they did not speak any Thai.

Tim, most thwi restaurants in the west are funnily, owned by Chinese people, even the so called thai dishes are heavily influenced by the Chinese people that cook them.

Actually Thai people don't use a lot of salt, because they use fish sauce in many dishes which has a salty taste. In the south they put a little bit of shrimp paste in many dishes and fish sauce in dishes so they use very little actual salt. In the north east they use pla rah in many dishes which has a salty taste and they use fish sauce as well. As for MSG most home cooks and restaurants put a little MSG in every dish, but the actual amount is very little. Probably less than half a teaspoon.

My favorite Thai food are those handmade stuffed sausages, that have rice and glass noodles in with the meat. I have my favorite stall in Chiang Mai in front of the 7-11 near the Chang Phueak Gate, which sells the halal version - two are enough for a meal. Since I eat a lot of rice at home I tend to see rice dishes as being "ordinary" and stuff like "milk chicken" skewers as reasons to visit Bangkok. Currently my favorite Thai food channel is OTR - they take really deep dives into the subject. I was quite amused to find that Pad Thai was actually invented by the military dictator of Thailand right before WW2, the government actually promoted it. Similarly, the sudden popularity of Thai food overseas was the result of a VERY successful Government program to promote Thai food overseas, and wasn't an organic expansion. As a result there are various Thai dishes (Pad Thai, the three Stoplight Curries, Tom Yam, etc.) that are seen as the standard Thai dishes.

I suspect the Star Talk channel is an offshoot (or perhaps parallel with) a regular TV spot on the American Public Television network (forget what it is called at the moment), that's been going on since before i was watching it in the 1980s. Used to have a different host, who was fairly elderly back then and has been replaced by Degrasse-Tyson.

Interestingly I never liked Thai food in Australia - I thought it was always way too sweet, and avoided going to restaurants...Then I visited Thailand and realised the thing missing was the spice - especially in Isaan....Even in Bangkok its hard to get good Isaan/Thai food as a farang - appearances and language are everything...

"Australia's first Thai restaurant was Siam (also known as Siam Cuisine), which opened in Sydney in 1976. It was established by Australian couple Glenda and Laurie Jessup, who returned from Thailand and were inspired to share authentic Thai flavors with Australians. Sticky rice is served with most dishes here in the north of Thailand (Chiang Mai), especially if you are in a restaurant that specializes in northern Thai food.

About oils: Seems like going back to the old ways is best ( from my research). Fry in beef fat, tallow, or lard . Vegatable oils are very bad, the way its made is crazy it also doesn't have a long life has a frying oil. I'm making my own mayo since i'm trying to stay away from the cheap oils. Do your own research, I'm just some idiot on you tube.

Aside from mango sticky rice, you'd be most likely to encounter sticky rice at street food stalls that sell sausages, grilled squid, meat skewers, fried chicken, etc. It comes in fist-sized lumps in a plastic bag (they actually weigh it), usually for 5 baht, sometimes 10, 15 at really upmarket places like Chatuchak Market. You're supposed to eat it with what you bought by pinching off bits of it through the plastic (I've watched people do it, and I have gotten fairly adept at it). I dare say most tourists, and even resident farangs, don't know about this - it took me a while to find out about it myself. The sticky rice is usually kept out of sight, in a cooler to keep it warm, and you have to ask for it.

MSG has pretty much become banned in Canada. To the point that it has been hidden on all types of package food no longer being called or referred to as MSG but is now referred to as yeast extract! So anytime you see ingredients, saying yeast extract it is MSG! Which is pretty much anything that has flavouring in North America … chips, soups, canned food…
