This is one of the most popular dishes for kids in Thailand, and it was definitely my favourite! I'm not really sure why it's called "son-in-law eggs" even though there are lots of theories, but whatever the reason, it's a delicious and unique dish that you must try at least once in your life!
Medium-boiled eggs (preferably duck eggs) is deep fried in hot oil so they develop a browned chewy skin that gives the eggs a distinct texture. Then a sweet-and-sour tamarind sauce is drizzled over it, topped with crispy fried shallots and garlic chips. For the adults in the family, break up the crispy dried chilies and add a little spice to your eggs! The combination of these ingredients is magical, and it'll be like nothing you've ever had. This is one of those classic Thai dishes that most Thai people grow up on, and I really hope you try it out!

You can use it but the texture of sauce will be difference since the palm sugar provide more sticky and gluey. Even though both sugar provide sweetness for food but it won't be the same. Palm sugar make your food more smoother than white sugar. One simple theory to cook Thais food about sugar is Palm sugar - For every dishes that use meat. White / Brown sugar - For desert. Some dish might not follow above rule but mostly it is. Especially if that dish use coconut milk, Plam sugar is a must. This dish reminds me a lot of my childhood since it's delicious and cheap. Anyway hope you enjoy your meal.

That looks soooo darn yummy! How you fried the egg is how my aunt used to fry them and then put them in a curry sauce. We make a dish ( literally called egg ball) and it's boiled mashed buttered cassava wrapped around a boiled egg then fried and it's eaten with tamarind sauce as well . My stepdad is Guyanese but I think egg ball is generally a Caribbean snack :)

Hey Guys... Anybody know the Thai name of the thai dish that is like a son in law eggs? So instead of boil eggs, it has ground pork stir fried on top of "Kai Dow" ( fried eggs) Topping is somewhat test like the stuffing for Thai stuffed omelette.

Zyber junker Kai Ra Berd or Exploding Eggs. My favourite! Although the sauce is different... It's made from holy basil, soy sauce, fish sauce, garlic, chilli, etc. More like fried eggs topped with Pad Ka Prao with tomato sauce.
