OMG me too! Not Houston though. My childhood memories are finally going to happen! YESSSSS! I sent this to my local mexican restaurant and he said he would give it a try! YEEEESSSSSS! We lived up on Cedar Creek. There was a restaurant that made them this way. It was amazing. Literally have memories of this and longing to find this.

Thank you for this! My ex-mlaw had never heard of sopapillas. Despite making & frying tortillas since she was a little girl in Mexico. So... on one occasion when she was at my house, I convinced her to cut the tortillas up before frying them to make them into little pillow pockets (that’s how I had to describe them to her to get her to understand.) She did, and once they were done, I filled them w/honey. And she actually liked them. When she went back home to Texas, she made them for all the grandkids there. Also, she refused to give me her flour tortilla recipe, because it was, gasp ... FLOUR! Which is all I had in the house.

So got a craving for these and looked up a recipe but this one is the one I will try next and all the techniques. I love eating them stuff t with chicken or taco meat and topping just as much as putting honey in them. Used to go to Pancho's All You Can Eat Buffet in Fort Worth Texas. I miss the flag, chiles rellenos, sour cream enchiladas, tacos, flautas, rice and beans are my top favorites there along with their sopapillas. Was fun to watch them being made. It was very affordable and you saw all income brackets there. We often go to the drive thru to get some sopas and tacos and use the sopas to eat the filling that fell out. Cheap good eats for the newly employed. Cowboy Gameday we would get the pack that was being offered plus some favorites. When I was little always got their burger took a while for me to catch on and boy was I glad to finally.

As to mixing the dough, put it in a Ziploc and you don't have to get your hands all messy.😂 I've had several from various Mexican Restaurants and mine are just as good which is not saying much.
