R E C I P E
Ingredients
10g fresh parsley
10g fresh sage
1 apple, cored and quartered
1 onion, halved
2 garlic cloves
20g olive oil
500g pork mince
1 tsp fennel seeds
2 tsp English mustard
200g feta cheese, crumbled
1 pinch black pepper
1 pinch sea salt
1/2 tsp chilli flakes
1/2 tsp dried oregano
2 sheets ready rolled puff pastry (or homemade rough puff pastry)
1 Tbsp black sesame seeds
1 large egg
50g whole milk
Method
Place the parsley and sage in the mixing bowl. Chop 2 Sec. / Speed 8. Transfer into a separate bowl. Set aside.
Add the apple into the mixing bowl. Chop 3 Sec. / Speed 5. Transfer in the bowl with the herbs and set aside.
Add the garlic and onion to the mixing bowl. Chop 2 Sec. / Speed 7. Add the olive oil and fry 10 Min. / 120C / Speed 2 / no measuring cup.
Leave the onions to cool in the mixing bowl.
Meanwhile, preheat the oven to 200C / 180C Fan / Gas Mark 6. Line a large baking tray with a silicone mat or greaseproof paper. Set aside.
Once the onions have cooled, add the herbs, apple, pork mince, fennel seeds, mustard, feta cheese, black pepper, salt, chilli flakes and oregano and combine 10 Sec. / Speed 5.
Place the puff pastry sheets on a floured surface and divide the sausage mixture into two. Place in the centre of each puff pastry sheet as a long sausage.
In a small bowl combine the egg and milk with a fork and brush on either side of the sausage log. Fold over the pastry from one side to the other and, using a fork, seal the seam by pressing it into the pastry.
You can now either leave the sausage roll logs whole or cut into pieces. Place on the prepared tray, brush with the remaining egg wash and sprinkle over some sesame seeds. Bake for 20-25 minutes until golden brown and all the juice from the sausage meat has evaporated. Serve immediately while still hot. You can also leave to cool and freeze. Defrost before heating in the oven. You could also freeze the sausage rolls uncooked, cut into pieces, and defrost before baking.

I want to apologize- I have been watching your videos-enjoying them so very very much- visited your website to copy your recipes-ordered your bowls and silicone mats that are both on back order. After all of that I have been neglectful to stop and shoot you a quick comment line to thank you for your generosity in sharing your incredible cooking and Thermomix recipes. Absolutely fantastic. I love your videos they are a pleasure to watch and the recipes are so easy to follow. The Thermomixer is such an incredible tool. Thanks again Sophia you are so adorable. I fully intend to do the banquettes and the crusty bread rolls. My birthday is just around the corner and the Thermomix 5 is is the only item on my wishlist.

Just made these thanks Sophia! They are absolutely delicious! But a lot of liquid came out of mine - I can only think from the apples. Is there some way to prevent this in future that you could suggest?

Hi Sophia, I have found your recipes so helpful and you are so good at explaining! I have been trying for a while to make sausage meat as I live in Italy so it's not available in the shops. I've watched your video on sausage rolls, but I'm wondering how to get the right consistency for minced pork (I can get pork fillet but although the flavour is nice, somehow the consistency was too hard when I cooked it). Would that be because it's too lean or because it needs to be chopped longer? Thanks for your help

Hi Sophia, thanks for sharing this recipe! when we combine are we using the "spoon" or reverse blade function and not the chop with the sharp side of the blade right?

Either is fine. It is up to you. I didn’t use reverse speed for this one as I quite like a finer texture
