Please continue making these whole foods recipes, they make me so happy. I made this soup like a million of times but I am still fascinated and would watch any bean content in general again. 😂 I wonder if you could come up with some recipes for some less known bean or lentil varieties or their combos.

Started watching this video 2 hours ago. When the carrots came out I decided I wanted a carrot, went for a 90 minute walk (just to get steps in), bought a carrot for 25 cents, then came home and ate it while finishing the video. Anyway, looks like a great basic veggie bean soup!

Handy middle ground with the carrot skins: scraping lightly with the back (dull) side of the knife takes off stains and ugly but leaves most of the good part of the skin. Cheap good eats for the win! Thanks for this reminder.

IDK if this helps anyone, but I'll put it here just in case. It how to fast cook beans - it's not super fast, but if figure out you want beans today, this is the 2.5 hour version: 1 LB beans 5 Cloves Garlic 2Tbsp Salt Sort beans & place in stock pot. Cover with water. Bring to a boil. Boil 1 minute. Set aside (whole pot with water) and cover. Allow to soak 1+ hours. Drain & rinse Place back in pot. Add garlic & salt. Cover with water again. Bring to boil. Reduce to simmer. Cook 40 minutes. I hope that is helpful 😊

One srake here is about 50 dollars now. Which is alot of families budget for TWO WEEKS for groceries, and with groceries going up in price with safety and quality going down and food deserts expanding more and more people aren't lying. For me to make a similar dish here it'll likely be around 40 dollars and that's without the expensive olive oil and using store brand beans, non organic produce etc. And it's less than a week of meals. Some families only have 30 or 40 dollars for two weeks of meals.

@InfiniteQuest86 Not everyone lives in the U.S. Where I live, even basic groceries are expensive. Cheaper than eating out, yes, but not cheap. It also depends on your budget. Steak is out of the question for many, and more and more people here depend on food banks these days. Some are a lot more privileged than they realize. It's good to cultivate gratitude and generosity. 😊 That said, it's a great recipe with a million variations. 😋

Your dish looks incredible! I find often healthy food is way less expensive but takes more prep time. If you make a dish predominantly with dried rice and beans you purchase in 10lb bags the price per portion is astoundingly low.

Batch cooking large quantities really helps saving time. I typically batch cook every ten days or so, make 16 portions of 4 different dishes, plus soup and vegan burgers using some of what I've cooked, and spend about 1.30 hrs cooking, which amounts to probably less than 5 minutes per meal. I eat from those for part of the week and freeze a lot of portions.I also have a series of quick meals recipes taking less than 10 minutes. The combination of my batch cooking meals, frozen meals, 10 minutes meals and big salads keeps me fed in a very healthy, affordable and not time consuming way all week. I've improved very much in all of those things compared to my previous omnivore days 3 years ago.

@awkwardPain - Yes, inflation happens, greed happens, but this is beyond the norm. It's absolutely bonkers. I've never seen prices go up with every single visit. You're right though, meat prices are nutty.. very glad to not be spending my money there. Over a decade now. We used to save a ton of money as vegans, but these days it's just not happening.

I think that during Covid producers discovered that there are still people who can and will pay the price to get the items they want. Until those people finally stop, the prices will not drop. It’s happening now with the fast food restaurants. They took the $ Deals off the menu and started charging $12-$15 per meal. Enough people finally stopped going there so now they are again trying to compete on the $ Deals just to lure the people back.

I eat soup for lunch in the colder months, I make large batches, freeze them in single portions pots and move one from freezer to fridge the night before. They’re usually almost defrosted by lunchtime. Curried parsnip, red pepper and sweet potato and minestrone are the three I make the most. I put canned beans in all of them.

If you want to make this recipe even cheaper (and tastier in my opinion), you can substitute the vegetable broth with a teaspoon or two of better than bouillon. I think the roasted vegetable or the no-chicken bases would both be delicious in this soup!

I'm not vegan, but I usually eat vegan (or vegetarian meals). I tend to cook stuff like this for me a lot, because I grew up with a vegetarian sister and cooking 2 meals (one with meat and one without) was too much of a hustle. I find comfort in vegetarian and vegan foods, and I don't really see a difference, to me is food and that's it. So I love trying out recipes from your channel!

It’s protein that costs the most. I recently discovered that it’s cheaper to fill in protein gaps with soy protein isolate mixed in water than to try and get all the protein into meals. That way I can enjoy a hearty leek and onion soup with a crusty loaf of bread and chase it with a 30g unflavored spi/h20 rather than trying to work chickpeas / tofu into everything under the sun.

With windchill, temperatures here in NH were -11F or colder this morning. I decided to make a big batch of split pea soup. Simple, delicious, nutritious, filling and inexpensive. I'm sure everything in the pot was under $10 and it will make meals for days. Plant based eating is very affordable when you cook from scratch and choose your ingredients wisely.

This is the stuff! I always have carrots/celery/onions and veggie broth handy, and it's basically impossible to mess up a soup starting from that. Any veggie, any legume, pasta, rice, quinoa...doesn't matter what you toss in there. Just season to taste and it's gonna taste great, and it can be as inexpensive as you want. Potatoes are quite cheap now in warmer climates ($2.99 for 10 lbs at my local Aldi), and those are a great cheap way to bulk up a soup. My family is currently a little obsessed with roasted chickpeas, which would add some great texture and flavor and additional protein in here, or just the other day I made some tofu Italian sausage crumbles that turned out amazing, and that would be great sprinkled on top. So many options!

Recently, I discovered a really easy money saving way to eat veggies. You can get a bag of frozen veggies, toss them in a little oil and your favorite seasonings, then put them on a foil covered, lightly oiled cookie sheet and bake at 450 for 20-30 minutes, depending on how cooked you like your roasted veggies. It's super cheap, and you don't have to worry about them going bad as quickly as fresh. I'm also a very picky eater (embarrassing and I hate it, but that's life), and I've found that this is an acceptable way for me to get some veggies in without them being slathered in a condiment. A bit of onion powder, garlic powder, salt, dill, and a little lemon are a good way to mimic a ranch dressing flavor 😁

It absolutely can be. If eating healthy is easy and cheap for you, you are privileged. For people with less access to a proper kitchen, time, or people in food deserts, it often can be expensive and inaccessbile. I don't understand the nature of this video, you can share what you do and maybe give advice about how YOU eat healthy and cheap without minimizing the VERY REAL issue of overworked people with very little time and money who sometimes don't have access to proper grocery stores. If you don't understand why it might not be cheap and easy for some to eat healthy, you have a lot of growing to do. This channel has recently taken quite a nose dive into diet culture BS so I'm not surprised to see another poop take. Good luck, hope you never end up in the position where you have to learn the hard way that eating healthy is very difficult and expensive for some. Glad you haven't had the misfortune of knowing that through experience.

Thanks for sharing this. I love to cook a very similar dish. Whole chickens are by far the cheapest protein here (can be as low as usd$1.50 a kilo). When on special, I buy two large birds and break them down into various meal sized cuts (you get enough for 12 decent serves) , then hard roast the bones and make stock. The stock is then used to make essentialy what you've done, though I use dried lentils, chickpeas and beans. If feeling fancy, throw in a chopped up chorizo to add extra flavour, or top with a roasted chicken theigh or two on top with a little roasted chicken. It is basically a casoule, but comes out at less than $2 a hearty serve. I don't make it because it is cheap. It is just freaking delicious. If vegan, it can be made with homemade vegitable stock (also dirt cheap to make). Homemade stocks are the bomb and dramatically reduce the overall cost of a meal.

Yeah, I also struggle to digest lentils/beans. The only things I've found to really help is taking an alpha-galactosidase digestive enzyme (Beano or the generic equivalent), or eating less lentils/beans (hard to do, since I love them and try to prioritize protein when I can!).

Except most underserved communities don't tend to have easy to actual grocery stores, they have convenience stores. It's structurally setup for poorer, underserved communities to not have good access to fresh produce, etc.

The main problem i see here is from a perspective of healthy food, this meal is not very much perfect because of the lacking amino acids in this form of food arrangement. Of course, if you eat the right things for the rest of the day you can maximise the amount of real protein eaten ( full essential amino acid spectrum as in animal based protein of any source), but that is not stated further in these type of videos, which i find sad because of the importance of protein, not only for athletes but quite frankly for everyone. If you eat enough complete protein in other sources its a perfectly fine meal but if you only eat beans you throw away a lot of the potential benefits of a high protein diet. But overall i love the channel and im sure youre aware of this i just wrote this comment to maybe bring the topic to life, love the videos and sorry for the bad English, im german.

When cooking for one it's very expensive or you have to eat the same thing for 3 meals a day before it goes bad. Yes you can freeze things but there's only so much space in a freezer. Also depends where you live. Lentils and carrots are cheap but that's about it.

Dried beans and rice are cheap especially if you have an Indian grocery in your area. I am fortunate to live close to two and their prices even on produce, grains, and spices are amazing. I never knew that there were that many varieties of beans. Also, Asian grocery stores have multiple forms of dried soy products at unbelievable prices (compare to our Soy Curls). They can also be a good source for fancy mushrooms; not cheap, but definitely less costly than Kroger. (Their many varieties of dried mushrooms ARE inexpensive!) At least we vegans don’t have to worry about the cost of eggs and poultry impacted by bird flu.

There was an interview where she mentioned eating vegetarian for environmental reasons, but then argued that: “eating vegan is expensive”.
