@@kashtrey As far as I remember, they would usually come up with the full idea, then go to the chefs and see if it needed tweaked or changed for the limitations of ingredients or time. I don't think the chefs would say to them "you don't want to put that in there, that's not traditional," or "okay, you're off your diet, carbs on carbs, huh?" At least, I hope that's actually what it's like, because, as they say, "It makes for good television!"
