Today, I want to share the best Chinese bok choy recipe because it is healthy, delicious, and super easy to make. It is a simple and yummy side dish that can pair with any meal. The bok choy is crispy and flavorful. The mushroom is tender and succulent. With this recipe, you can go throw bags and bags of bok choy easily.
Ingredients
400g / 14 oz of baby bok choy
113g / 4 oz of shiitake mushroom
4 scallions, roughly diced
4 cloves of garlic, sliced thinly
2.5 Tbsps of oil
1.5 Tbsps of oyster sauce (Amazon Link - geni.us/premiu...)
2 tsps of soy sauce (Amazon Link - geni.us/light-...)
1 tsp of dark soy sauce (Amazon Link - geni.us/dark-s...)
2 Tbsps of water
Instructions
Whenever you buy a big bag of bok choy, and you are not planning to eat them all in one day, you can tear the outer leaves from each bok choy and cook them first. The center core can stay good in the fridge for up 1 month. Of course, the timing depends on the condition when you first got the bok choy.
Tear the leaves off the bok choy. Wash and drain thoroughly. Cut the stems into bite-size pieces. Separate the leaves and the stems because they take different amounts of time to cook through.
Cut the mushrooms into 1/4-inch think pieces. I am using shiitake, but oyster mushroom and chanterelle are also good choices.
Add a generous amount of cooking oil to a wok, along with the scallions and garlic slices. Stir over low heat until the aromatics are lightly golden, which will take about 3 minutes.
Add 1.5 Tbsps of oyster sauce, 2 tsps of soy sauce, and 1 tsp of dark soy sauce and stir well. This is a classic scallion sauce that can go with almost any vegetable. It gives the food a savory taste and a desired brown color.
Toss in the bok choy stems and mushroom slices. Drizzle a splash of water from the side of wok. The scallion and garlic are already camelized, so the water here will prevent them from burning. Keep stirring over medium-low heat for 2-3 minutes or until they are soft.
Add the bok choy leaves and continue to stir until the leaves are wilted. Serve as a side dish.

My late mother loved bok choy (she pronounced it "bok chow"). Toward the end of her life, it was one of the things we talked about cooking together, but never got around to doing. On her birthday in November, I'm going to make this recipe in her honor.

I love baby bok choy..it is a cheap and healthy vegetable. I get a huge bag for $2 in my Chinese market. I cook it whole. I boil salted water place white parts for 1 minute or two. In another pan I have Oliver oil lots of garlic cooking then add finely chopped or mashed large ripe tomatoes the I add semi cooked bok choy. Cook until desired texture add salt and pepper and enjoy

I made this last evening for dinner and it is delicious! I was going to have it as a side dish, but had some leftover rice in the fridge, so when I completed your recipe I turned off the stove and just added the rice to quickly heat it thru and enjoyed it with baked chicken thighs. My husband also loved it and that's saying something... he said, "I don't know what bok chow is but it's good." I can hardly wait to make it again. I love this channel! It doesn't matter I will never cook most of these recipes because the ingredients are hard to find where I live, and when I do find some of them, they are WAAAY too expensive for my budget (rural area, they are "exotic" foods)... I HAVE learned SO much from this channel that has improved my cooking to the point that even my friend is impressed. Thank you SO much! About corn starch helping to make food crispy when fried, for example. I don't fry food a lot, but the last time I fried chicken, I got compliments like never before. I hear you, I'm in NE Kansas. I'm lucky enough though to only be about an hour from Lincoln, Nebraska. There is a really nice little Asian market there my wife and I make a stop at every other month (also our stock up trip to Aldi). Also, though not helpful for fresh produce, most sauces and spices are available on line. Mindy also suggests more available substitutes for many of her recipes.

This recipe would work great with regular cabbage. Cut the cabbage into square pieces. If mushrooms are too expensive try carrot sliced on diagonal. Before I cook with oil, I put a small amount of water to precook carrots because they need more cooking time than cabbage. Then drain off water and set aside carrots to add at end of recipe. I also reduce oil to 1 teaspoon due to cost and health. Using 2 soy sauces regular and dark IS necessary.

so i made this recipe tonight, well sort of. I didn't have any mushrooms, nor green onion, nor dark soy. I subbed the GO, with a regular white onion, the dark soy with some molasses, and left out the mushroom. It was way better than i though it would be. I still have some bok choy centers in the fridge, and will be making this again tomorrow. I'll make a trip to the corner store for some mushroom though, as I thought that ingredient is needed. I also have some plans to velvet some meat, chinese, style, and add that too, with some fresh jasmine rice. oh yes. This is going to be the MAIN dish! Ive also made plans for the garden to grow some of this vegetable. This dish is like comfort food, from a childhood that I never had! wow, yummy.

My first Chinese vegetable to work with! Always up for more bok choy recipes. I would love to see more recipes for the old-school white stalked, dark leaved bok choy as well. Since Shanghai Bok Choy was introduced, I use it when called for but still have the taste for the 'original' bok in my life. Happiness.

I grew bok choy in containers on my porch last year. It was so easy to grow! Didn’t have a clue how to cook it, so I just threw it into stir fry dishes and ramen soups. That was pretty good, but this looks fantastic! Saving, and I just subscribed.

I made the sauce but by mistake I used Hoisin vs Oyster sauce. It was excellent but a little sweeter. The following time I used Oyster sauce and found it very delicious also.

I had no idea that bok choy and mushroom were a classic pairing. I happened to make something very similar tonight because it’s what I had on hand, except I used oyster mushrooms, which were very tasty. Added a touch of chili oil for spice.
