That sandwich looks 🔥 I agree everything tastes better chopped up small. Hard to bite into big hunks of meat and tomato without tearing apart the sandwich. Cut small is easier to eat. Also-loved the idea of squeezing excess liquid from tomatoes. Brilliant.

I have made both of these recipes, and we liked them both. I will say, the sub/grinder filling does not "keep" well. We didn't use all of it for supper, and the next day it was watery, even though I de-seeded the tomato and dried the chopped pickle before adding them. So, adjust quantities downward if you think your family will not eat a huge bowl of it in one go.

Google up the knock off kmart sub recipe. We used to fill the cooler with these for a day on the boat. Kmart is gone😢. Now I make these a few hours before dinner and refrigerate. I don’t think the recipe calls for it, but I put a little pickle juice and some sweet ring pepper juice on the bun before the meat, cheese and veggies. He gets actual ring peppers and pickles, but I don’t care for these themselves. We also add mayo . DO NOT forget the mustard, it is not even close to right without the mustard, another item I do not care for otherwise. Much like this but not all chopped up. Now I think it will be added to next weeks plan. This weeks “sandwich meal” is egg salad with carrots, celery and sliced peppers with ranch. (Tomorrow)
