In the late 80's, the USSR did start serving "Pizza" in various government run and cooperative eateries. These eateries were intended as a way to quickly provide nutritious and low cost meals to large numbers of workers, students, and other citizens. The government's goal was to fight famine, rather than make a profit on the food itself. So the meals were cheep, but at least nominally of good quality (there was some theft, some shortfalls in deliveries, the food sometimes spoiled or arrived spoiled). The Soviet version was essentially a thick yeast-dough crust, piled with cubed cooked vegetables, sausage, and sometimes hard-boiled eggs; covered in shredded cheese not entirely unlike western block-cheese, and held together with mayo. It was good, filling, and nothing at all like what an Italian or even an American might call "Pizza". After baking, some versions got topped with a sprinkle of fresh herbs (usually dill or parsley or both). The whole thing was like a hot version of a "winter salad" on a bun. Winter salads featured ingredients like cubed boiled potatoes and carrots, some sort of cooked meat product, often pickles or olives, onions, sometimes cheese, and dressed almost invariably with mayo and served cold. They ate like a meal, but could also serve as a cold side to a meat dish, or the filling of a sandwich, in smaller portions. If you look up "Soviet Pizza" you'll get this video and a bunch of stuff about Gorbachev's promotional deal with PizzaHut. But the USSR did indeed have "Pizza" before all that.

True slavic pizza, at least for me and a lot of Polish people i guess is kinda different. Dough as thick as 5 cm, fat slices of kielbasa, copious amount of cheese, and a lot of onion. As a sauce ketchup mixed with tomato paste, and some spices. Came out of the oven tall, greasy and delicious. Of course best was made by grandma, and i really miss her for that :')

I can accept the majority of the ingredients used in this video, but as you can see at the end, the pizza is soggy and it seems also a little uncooked, the fresh tomato under the sea of mayo (that is a non acceptable ingredient) prevent it from cook well and, well, be a pizza, really 😂

And yeah, I think this pizza might have been a bit undercooked and/or soggy, hard to tell. But hey, if you're drunk...I've seen drunk people eat the weirdest things (yep, also in italy).

In fact 90% modern slavic recipies are this quality. Slavic Oliviet, soviet crab sticks( fish sticks) salad, etc. potato pie in slavic countries is toped with mayonnaise to have better crust The most interesting slavic salad i have ever tasted was made of canned beans, flavoured rusks, shredded cheese and garlic. Receipt is easy: take a bowl, add beans, then garlic, shredded cheese. Stir a bit, add mayonnaise, stir better. Cover the bowl with kitchen file or foil and let it get its flavours for about an hour. Serve with fennel's green and garlic or onion flavoured rusks. Rusks might be homemade. Me for example doing them this way: two slices American bread ( might be brown bread), brush them with garlic and herbs olive oil, put them incide the oven on 5 minutes and mid fire.

Dear Boris I have been an enjoyer of your videos for a couple of years now. Your humor, recipes, and overall Slav-ness have never failed to bring a smile to my face. Imagine my joy when I saw you would soon be publishing not one, but TWO books. While your cookbook is on my Christmas list, it was "Roadside Midnight" that made me smile. I simply couldn't imagine Lev without a face mask, glasses and ushanka like yourself, but I fell in love with all of your characters. The setting was even kinda sorta familiar. While I live in the USA, in Michigan to be specific, your words about the woods and fields and of the island in your small post-Soviet country remind me a great deal of the Upper Peninsula just a few hours' drive north of where I call home, where I have spent many happy days of my life getting away from day-to-day humdrum. It was the ending that got me the most. That simple, but so lovely roundabout ending where we get a taste of what can make life truly beautiful: Food, Friends (old and new) and the glorious adventure of an unplanned journey with both. I finished the book over a long weekend, and the end brought a smile to my face. Not every ending to a book can do that to me, but yours did. In Bulgaria during the Socialist period there was pizza, but it was called гарнирана пита (garnirana pita or bread with toppings). The home made pizza in Bulgaria is with лютеница (lyutenitsa), кренвирш (krenvirsh or Vienise sausage) and кашкавал (kashkaval or yellow cheese), but ingredients can vary from household to household.

It seems my family from Pernik was rich during the Soviet times. We had on top of the dough: lutenica+mayoneza sauce, then => krenvirsh, canned pechurki , sirene, topeno sirene (if available), kashkaval or pusheno sirene (depending on which is available in the fridge that day), sometimes even olives.

It is strange to see people freaking out about proper italian flour and stuf like that for pasta and pizza dough. Wheat from the former soviet countries is more than good enough in terms of gluten content and refinement in the production process. Alot of pasta that comes into norway is actually manufactured in Lithuania and other eastern bloc countries, and its great!

Regional pizza's one of my favorite culinary phenomena. Ends up being even more variety than regional ways of serving sausage. Ever seen Chicago-style pizza? There's one for when you want a dinner that'll immediately seal your arteries.

Boris, I have found a slavic import store near me and have finally had a chance to taste the soviet cheese. It is genuinely some of the best cheese ive eaten, mild yet creamy and salty and delicious. the woman also had a similar cheese from poland, im not certain of names but I will be buying more
