Go, man, go! Nicely done! I separate my eggs same way as you! Don't forget to save those bacon/pancetta pan drippings for some nice skillet cornbread...bacon drippings really make a nice cornbread! Chef, we love your videos!

Only thing is a true Carbonara uses Guanciale, not pancetta, other than that perfect.
