Sicily, May 2016, in an uncultivated field not far from Caltagirone; what were we looking for? an archaeological site? a landscape? I do not remember. But I remember very well the scent of wild fennel that rose up from the ground directly to my nose. Fantastic! Then I discovered that wild fennels also grows here in Tuscany, on the hills near home, and that even I can easily recognize it. Since then, every year I prepare lots of wild fennel pesto. It's superb on any kind of pasta!

Ingredients (for about 6 servings)
◾ 100 grams of wild fennel (you pick it up in 5 minutes)
◾ 80 grams of pecorino romano
◾ 80 grams of almonds
◾ garlic (according to taste)
◾ extra virgin olive oil
◾ salt
