I made this, and it is good with the water base. But I would recommend chicken stock or broth to bring this to another level. Very simple evening dish or when you’re stomach isn’t feeling 100%. I love the soft-cooked eggs!

Was just thinking the same but I think a vegetable stock would pair better with the garlic. Also it definitely needs to be thicker, so I would add more bread or some flour to the stock.

This video recently popped up on my feed, and I'm so happy it did! I made a small pot for lunch today, to eat with bread and salad. I used the water base, about 3.5 to 4 cups, 2 slices of baguette cut slightly thinner, 4 cloves of garlic, and the full amount of the rest of the ingredients. I used Italian parsley, because it was what I had, and 3 eggs for my full meal. I'm glad I used less water for the listed ingredients, because the flavor and aroma was amazing. I use much less salt because I'm on a lower sodium diet, and it was still delicious and comforting. I think this is a great soup to experiment with. I don't always have fresh bread on hand, but I always make my own croutons with our leftover bread, so I would probably use those in a pinch, and dried parsley if fresh is not available. I personally would not use any flavor stock in place of the water, because it would take away from the delicate flavor of the saffron and eggs. When the soft egg yolks are mixed into the soup when eating, it creates a creaminess and richness that would get lost if there was flavored stock used. I didn't have fresh lemon this time, but I can imagine it would add another dimension to this soup. Next time. 😄

This is such an unusual, simple, lovely recipe -- it would be the perfect appetizer course for a spring dinner party! Just add or subtract eggs to equal the number of guests. I tried this yesterday. It wasn't bad, but not my favourite. I probably added too much parsley into the paste, so the flavour was probably not as advertised. I'll definitely try it again. I haven't got the eggs right yet either. I left it in just little too long.

Back in the 80’s I found a similar recipe in a Frugal Gourmet cookbook. He used hearty breads and a couple tablespoons of paprika besides the garlic, then put the Dutch oven in a hot oven to bake the eggs. Interesting variations!

My this looks tasty! I do something similar, but with chicken stock, and then add a handful of fresh spinach to each bowl before adding the poached egg and the broth.

Adding the fresh spinach ups the protein and vitamin/mineral content considerably. I sneak it into lots of soups and stews for that reason. I love fresh spinach but really dislike the flavor of cooked spinach. When added in smaller quantities and with more flavorful ingredients I don’t find it objectionable. I think I will be trying it your way as the original recipe will not fulfill my requirements as a balanced meal. I don’t have the physical energy or financial resources to make large meals so one pot meals are a necessity. Thanks for your input!

Had this for lunch today, it is very good. I made mine with a slightly thin vegetable stock but otherwise as per the recipe, I'll certainly be making it again. I used my mortar & pestle to be authentic but it's a lot of work to get the paste as smooth as shown so next time I'll be whizzing it through the small processing bowl on my stick blender. 10/10. p.s. my wife was did not want an egg but thoroughly enjoyed it just as a stand alone light soup.

Many years ago I had a wonderful garlic soup in Nerja Spain. It was a darker soup and I think it has some peas and carrots? The waiter cracked the egg into the soup bowls right at the table. It was so good. I will have to give this version a try.

I'm Ukrainian, in my family we sometimes prepare this soup, but call it just a chicken bullion. Add egg just like you, smashed garlic, a little parsley and dill and toast some bread and you're good to go! It was always a dish for those days you catch a cold or if my mom had some excess chicken broth while cooking some other more complicated soup (soup culture is going strong in Eastern Europe, soups are our staple food). Never knew Spaniards cook it also! Considering the similarity in ingredients, I suppose it came from a single source in history, or it just came from the Mediterranean to us
