This. Makes for the best kind of broth you can use for any recipe even when cooking with beef or sausage. Perfect for stews or a soup which is in season right now. Not sure why Alan went through all the trouble to put onion, garlic, lemon and etc. in the bottom of the pan when he wasn't going to use it for anything, could have made a delicious sauce or something out of it.

Organs are great source of fat soluble vitamins, also chicken legs and comb (if u can find them) have lot of collagen for broth... chicken breast are worst (have least nutrients but most protein) from the chicken, but most of the people eating just them :D, eveyone si scared of fat... fat is love, fat is live

yes! I like to roast the chicken whole butterflied then put bones in slow-cooker with onion, garlic and spices for up to 36 hours!

+Paul bee for far is the soup reduced at that point? From how many liters to? I know a slow-cooker doesn't vaporize as much liquid as a stove does, but still after 36 hours!

Lars usually 24 hours, reduced at most an inch. Halfway through I crush bones to get all marrow out. 1carcus makes about 1 liter. I throw in beef bones from rib, t bone steak too.

Use the carcass to make a mean stock. You can reduce it by boiling off some water and then pour in an ice cube tray. That way you can store them for ever and easily use them as your own stock cubes for recipes.

This is crazy educational, and I'm pretty sure putting in the extra 15-20 minutes to do this (It'll probably get lower with practice) will save me thousands over the years. Thanks for putting this together. I didn't have a dad to teach me this kind of stuff, so thank God for KZbinrs like you.

Many grocery stores clear out meat with heavy discounts on Tuesdays or Wednesdays. $0.79-$1.29 per pound for chicken thighs at my local Safeway in San Francisco.

Nice marinade recipe! I would personally stick all of the chicken in a bowl with the marinade and salt and pepper and mix it that way. Even stick it back in the fridge for a few hours. Delicious!

Another plus to buying whole chicken is you get the liver, heart and gizzards; all full of vitamins and tasty. You should also check the package for water percentage which they legally have to show. Some of the chickens and chicken parts you find at bigger stores will have 12-20% water or broth added to help with freezing, thawing and transport. Also if you find you dry out chicken a lot try to dry brine them, about 4 hours before you cook it sprinkle kosher salt on the meat evenly the salt will pull water out then the water will be reabsorbed drawing the salt with it. Also if you're a gravy person, spatchcock (cutting the back out and splitting it flat) the bird and roast in a cast iron pan it'll make for easy gravy making.

Thanks for this video, I started doing this in the UK where 1kg of chicken breasts is about £5 and a whole extra large chicken is about £4.50. The breasts will give me 4 portions and about 56g of protein per portion. The breasts, wings, thighs and drumsticks all off the bone gives four portions of about 45g of protein, but using the carcass for stock, along with the leftover meat will give four tasty soups with some chicken left in there.

Boneless Skinless Chicken breast is generally $2.00/lb or less (as low as $1.39/lb in my area) when on sale at most grocery stores. Just wait until it is on sale and buy a lot. Also just check out the weekly ads for grocery stores. Weekly sales prices can save you a ton of money on beef, fish, chicken and other stuff.

Solid. I just toss a whole chicken in a crockpot and let it sit in some of the same fixings. It takes about 30 seconds for me to pull all the meat off the bone when its done cooking too

Not sure where everyone lives, but here in Arizona it seems as though most grocers will do a buy 1 get two free on either chicken breast or some type of cheap steak every couple of months. With the price of chicken ending up around $2.00 or less a pound and the steak around $3.00 a pound. Then I just stock up every time in comes on sale. However I do recommend putting all the meat in freezer bags before freezing instead of just freezing them in the grocer packaging.

Great video - simple and efficient! When I don't have time to cook or prices aren't great - Costco Rotisserie whole chickens are affordable and pretty tasty @ $5-$6 a chicken, just take it home cut it up or shred it. However, Alan did a great job and I'm going to try his recipe out.

that is a great video. it's also worth pointing out that all those bones are GREAT for making stock. Literally just pop them in a pot, cover with water, maybe add some onion and garlic if you want and simmer for like 18 hours. Boom: all the collagen you could ever want in a delicious beverage.

And for deadlifts sake!! save the rest of it cut the bones in smaller sizes and put in a big ziplock bag in the freezer. then a few times a year when the bag is full or you need it take them out and use to boil an amazing broth for soup or stews and loads more. i like to cook my chickens in halves mostly and i just cut it in half with a shear by cutting the middle of the breast and then BOTH sides of the spine and save the spines in the freezer.

Chicken bones can be used to make bone marrow broths for chicken stews ect :) I'm vegetarian so I get most of my protein from eggs, legumes, veg, nuts ect. I'm not the extremist type at all though, and I'd much rather see the whole animal being used than large amounts wasted. I definitely agree on buying the whole chicken, duck or whatever poultry you are eating.

My local butcher shop has 10lb bags of boneless skinless chicken breasts for $1.09-$1.49 a pound depending on whether or not it's on sale. Arnold's Meats is a godsend for anyone near Chicopee Massachusetts.

If you simmer the bones for a day or so you can actually extract the vast majority of the nutrients from them, as well as the scraggly meat left on the carcass, in the form of tasty bone broth

Another tip if you do not have time to do this and do not mind spend about 11 cents more a pound on chicken. Walmart and Wegmans both have five pounds of chicken (breast, skinless, boneless) for 1.99 a pound. IT IS AWESOME JUST BUY THE FAMILY PACK. His method is cool if you do not have access to those stores, Keep up the awesome content man!

$4.63/lb for boneless skinless chicken breast is crazy high! I live in Western NY and I can get boneless skinless chicken for $1.99/lb at Wegmans. Whole chicken is usually around $0.99/lb.

Matthew Anthony where did you get that from? Europe pays some outrageous taxes as they have a lot of subsidized things. I'm pretty sure as far as income tax is concerned we are in the middle low end and have some of the highest expensive incomes in comparison

With your name you seems to be from Quebec. If I'm right, it's more 11-13$ a kilo. Costco 2kg chicken breast packages are like 24-28$. It's still more than in the US though.

Use a meat thermometer or take your pinky and thumb and tap together and poke the fat part of hand below the thumb. Thats is how the chicken should feel firm with a slight give
