Awesome video thank you. I’m in such a ghetto kitchen right now, but I look forward to the day I have a technologically advanced, super efficient kitchen. Appreciate all this knowledge. Those flower tote bins are an awesome idea. My dad designed something like that in the 90s to sort your clothes, darks, whites, colours, and now it’s being introduced back into my life for pizza 😂. just curious to know why you want the sauce preheated before entering the oven? does this allow a better rising of the dough and better melting of cheese? wouldn't a sauce with a lower temp allow the cheese to melt more slowly, which in turn would work against oil separation from the cheese during the baking process. btw, love this video.

That sauce is added on post bake for their squares. They have a different sauce for pre bake and they typically use that for their round pies.

@@ps31871that’s actually one of the biggest myths dispelled. Wood fired cooking is so fast that smoke is not imparted in the pizza.
