I keep a bag of cake flour in my freezer. When I have a cake mix that is less than the recipe calls for, I add cake flour to bring it up to what the recipe calls for. Never changes the flavor.

Tom, I've found placing the cake mix in a sifter results in a smooth layer. I still remember the video where you had a bad egg. In my eighty years I never had a bad egg, but I now always separate them. That's how much I applaud your instructions.

I have almost the identical recipe called Pumpkin Upside Down Cake. The baking dish is lined with buttered parchment paper before adding the filling. After coming out of the oven and allowed to cool, it is inverted onto a larger baking dish or baking pan and the parchment paper is removed. The nuts and cake mix become the crust. Without tasting yours, I know the taste is insanely delicious.

This is going on my Thanksgiving table. Looks fantastic! Last year I bought from the Arms Family fresh pecans straight from the orchid from them. 3,000 pounds of fresh whole pecans and pieces sold out I believe in a day. I'm not a family member or anything. . I only watch their channel on U-Tube. But my family did a blind taste test. Everyone picked the fresh ones verses the store bought. I know how Tom loves ❤️ pecans. He will really love these. Their going on sale soon. Watch for it. I'm eagerly waiting for them. All my love to Tom & Melissa. There's a pecan tree in my backyard but it doesn't produce pecans anymore. Hasn't in many years. Used to get tons of pecans from it. Only thing I can think of is my neighbor also had one but cut it down. Perhaps it stopped because it has nothing to cross pollinate with? It is an old tree so maybe that's part of it. I sure do miss those fresh pecans. Yes, there is a big difference in taste and texture.

Kathie says…This looks wonderful!! The other day I halved the recipe for your Caramel Apple Dump Cake and baked it in a 9”x9” pan. It turned out Perfect!!! Because I have half of a box (1 1/2 cups) of yellow cake mix left, tomorrow I will make half of the recipe for this Pumpkin Dump Cake (not using the pecans) using the leftover cake mix! With the leftover caramel bits I will make some caramel topping to drizzle over it, then add the pecans, toasted, on top! 🤞🤞🤞 I hope that it turns out as good as the one that I made a few days ago!!! I just love your bowls, I never see bowls so pretty. Also I’ve heard of dump cake for a very long time, but never knew how to make. When I would ask anyone I asked they would always say the same thing, just dump everything together and bake, never made sense to me, thank you for showing me how.

Looks so good! I'm with you on cracking the eggs in a separate bowl in case of shells or bad egg. All these KZbinrs showing cracking the egg straught into the mixture...I'm thinking if that happens to be a bad egg youve ruined all your ingredients...not to mention stray egg shells.
