I love this recipe! I make soup all year long (hot, cold, room temp) and usually have a container in the fridge for quick meals or snacks. This would be perfect, chilled for summer and hot for winter. You do rock, Sarah!

i cut the tops off leeks, then make a cross in the flat top, and rinse the leeks under the tap, the cross cut loosesns the leaves and works splendidly

I find it easier to wash the leeks before dicing them. I cut them in half the long way and rinse them under running water.

Wouldn't u think since she is cooking with Vegetables, it be a lot better to use Vegetable Stock instead of Chicken Stock to enhance the flavors of the carrots and leaks?

Using vegetable stock for a vegetable soup can dull it down a bit, having chicken stock in the vegetable soup helps to contrast the flavours and adds different flavours to the soup rather than putting vegetable stock in the soup when there is already vegetables in it.
