What size pan is that and splatter screen?

It’s just a regular sized cast iron with I think a 11 or 14” splatter screen!

You can absolutely cook all 4 at once. Your pan burnt the oil in half of it. It'll still get crispy edges, especially if you use lard, tallow or other high smoke point oil. Olive oil burns at a lower temp than most.

I always put the splatter screen the opposite way so the metal legs rest against the pan, is that wrong? The other way, the mesh screen burns

I'm not going to lie, they look good but I almost know for certain there were some chewy unwanted parts. I've just started to slow cook thighs because of all the connective tissue

180° is way too far imo. I'd pull them at 155-160°° and let the carryover heat finish the rest. These look great though.

It’s dark meat. It doesn’t dry out like the breast. You can take them to 180-190 and it still won’t dry out.
