You could also try wet hand/dry hand technique. Good for when a fork might break apart the nugget.

The one thing I was thinking I missed from not eating meat WAS McDonald's chicken nuggets specifically, I cant wait to try this out!! ( I ended up cutting meat because it doesnt feel right in my stomach and I also have real weird and terrible nightmares)

I do something similar with nugget sauce. I use BBQ sauce, honey, and cayenne pepper. I'll have to find something else to use instead of honey but I'm sure maple syrup or something similar will do just fine.

These look amazing!! We will definitely be giving these a try. Can I ask a weird question? For using tofu, why do you have to freeze and thaw it twice? What does this process do to the tofu? Thanks for posting!

it gives the tofu a tighter texture, due to some weird science thing -- it basically make it more meaty!

Water expands when it freezes, and tofu is full of water. The freeze/thaw changes the texture of the tofu, giving it a chewier, more chicken-like texture.

Yup, what Rosie and Stacey said. It just makes the Tofu have a more "meaty" texture. In a pinch I've frozen and thawed once and it was fine, but twice is twice as nice :)

These were so good 🤤 Full disclaimer I haven’t had McD’s nuggs in like 20 years so idk if these nuggs are exact BUT to my mouth these taste exactly like Plant Power’s nuggs for all my SoCal folks. And I’m pretty sure Plant Power styles their nuggs after McD’s. Anyway these are the most perfect nuggets and they go so so so well with therburgerdude’s delicious Kimchi Mac n Cheese. ❤️

Hmm, if you made them the way I did then I don't know! Making sure the oil is at the right temp and resting on a wire rack are key for crispiness.

Late to the game on this one. But is this the only recipe where you dredge dry then wet? I feel like I've always seen you(and others) end in the dry. This texture looks great and I'd flip the order for other things as well.

Yeah it results in a more tempura like batter. I watched a few McNuggets copycat videos and this seems to be the way to go to get the kind of texture that McNuggets got!

It won't work since the batter is wet on the outside, but I have a few air fryer recipes on my blog and a lot of my fried chick'n recipes have an air fryer option.

The tofu block I used was great for one freeze, not two (as I found out after, I needed one a little firmer than the brand common to my areas). Half of it was perfect for shredding, but the other half of the block crumbled into very tiny bits. So, after dredging the good half, I just threw the rest of it in the liquid, added more flour, and shaped two, large "patties". They turned out pretty good (but make sure to fry them longer so the flour on the inside is fully done), but the good nuggets were better. Either way, this recipe turned out INCREDIBLE, and the only issue was the tofu I selected.
