I absolutely love your unconventional video's! Watching from Australia, I'd love to see you look into overnight mashing, I have kids so struggle to get time to brew, I have seen some people talking about overnight mashing but I can't find much content about it at all.

I'm thinking about doing a Dunkel @ about 5% abv . What level of carbonation would you recommend ?

That would be normal lager I think. Use my calculator it also suggest CO2 volumes for a lot of beer styles. If You don't find the actually style, just choose a one close to it.
