Today's recipe is for a yogurt pudding with cherry blossom jelly on top, perfect for spring.
Light yogurt pudding and slightly salty cherry blossom jelly is a sweet that reminds us of spring 🌸.
If you use yogurt that is freshly cold from the refrigerator, it will cool quickly and save time.
▷Ingredients (for 4 servings):
■Yogurt pudding
200 g unsweetened yogurt
50 g granulated sugar
200 ml milk
5 g sheet gelatin
Cherry blossom jelly
8 salted cherry blossoms
20 g granulated sugar
120ml water
1 g sheet gelatin
▷Preparation:
Soak the gelatin sheets in ice water to soften.
▷How to make:
1. Blend unsweetened yogurt until smooth and add granulated sugar.
2. Add the granulated sugar to the milk and warm to 60°C.
3. Add drained gelatin to ② and dissolve. Add to ① and mix.
4. Strain the pudding liquid, transfer to a cup, and refrigerate for 3 hours to harden.
5. Shake the salted cherry blossoms in water to remove the salt.
6. Heat water and granulated sugar to 80℃. Add (5) and transfer the aroma of cherry blossoms to the sugar solution.
7. Add drained gelatin, dissolve, and cool to 20℃.
8. Pour the jelly and salted cherry blossoms over the yogurt pudding and refrigerate for 2 hours to harden.
