Lovely recipe and clear video. I added a couple of things the second time cooking. A couple of star anise to compliment the fennel in the spice mix, some moscavodo brown sugar, desiccated coconut, a handful of raisins and a can of chickpeas. Only 5 Birdseye chillies was enough for me! Still very tasty. Thank you.

@rtruth5240 Thank you for your question! If the curry turned out too watery, for next time, try simmering it a bit longer on low heat until it thickens to your liking. I hope it still turned out delicious!

Hi Satyam. This looks lush! I'm preferring traditional style cooking rather than using a base gravy (for speed). I've already got this weekend's curries sorted but want to try this next week maybe. We generally prefer our curries with a bit more sauce rather than thicker, to achieve this, would it just be a case of adding more coconut milk...say 350ml? Thx

Yes, if you want gravy you can add more coconut milk(350 ml should be fine). Also this curry is spicy adjust the spices according to your taste.

@@satyamskitchen Better later than never! I've just realised I never left a follow-up on this for you - duh 🙄 Love it!! Have it regularly now. I didn't have any Lite Coconut Milk when I first made it, so just used 'normal', which I've continued to do. As I said, I like more sauce so use more or less a whole can and reduce it down to my prefered thickness. I also add a tsp of chilli powder after grinding the roasted spices for some extra kick. Thanks once again for the recipe...👍👏

I think you've forgot to add the ingredients which you fried from 0:36-1:26 of time period in the video. I did not see that you are adding it later on. Sorry. However its a nice 🐔 curry. 👏

Hi I tried to make this just now. I thought I followed to the best of my knowledge, however it came out tasteless and watered down. Your video looks amazing, where am I going wrong? Also does not grinding the seasoning to tiny pieces make a difference? Also mine appeared lighter than the video?

Ensure the heat is adjusted, and also allow the water to evaporate , the stew becomes thick.
