Well, it is a struggle in humid conditions, sadly. They really don't like it! I package mine immediately (individually) in cellophane bags with a tie and I store them in a box in a cool dark place. Never refrigerate them. I hope that helps

I just found out if you want to try this I live in Texas HOT and sticky here. Use half of the amount of water and most of the sticky goes away. I'm happy now.

Hi. I haven't made my own embellishments. I would worry that they would disintegrate in the boiling sugar. Perhaps I'm wrong! Let me know how you get on ❤️

When I make mine, I spray the pan with cooking spray.easier to wash the pan also the glass that i pour from, I've never had a problem, just don't make it to heavy

Hi I'm sorry to hear that There are a few factors to this Make sure you take the sugar accurately to temperature before you pour. If not they will be sticky If it's hot and humid in the environment they will be sticky. Lollipops hate humidity. They need to be cooled and wrapped and stored in a cool dry place and not the refrigerator I hope this helps you 🙏

Stacey these look amazing! I tried your recipe, it turned out great!! But after a while the lollipops became stickey, it was difficult to put it in the wrapper and it was difficult to take out of the wrapper too. I stored it in a nice air tight container as well. I live in an area where there is quiet some humidity, what can I do?

You may consider trying Isomalt. It is easy to use and dries quickly with no “moisture”.

Is it humid as this can be a problem? If you follow the instructions and take the sugar to the correct temperature (and do not refrigerate) it does work 🤷🏼

I've been trying to make suckers out of honey for two days now and I can't get the honey (mixed with sugar water) anywhere close to the hard crack stage before turning a foul burnt taste and smell. I've been using thick pots, tried heating slowly, stirring frequently, but nothing seems to be helping. Any help you might have would be SO appreciated! Thank you!

@@StaceyDeesKitchen Your video flashes up saying 200g of Granulated sugar then 450g of Granulated sugar. But your recipe states 225g of Glucose syrup and you even say "put 225g of glucose syrup" was the 200g of sugar a mistake? Should this extra sugar be ignored?

Don't worry if the sugar sets on the pan. It will dissolve in hot water. Granted it will take longer than if you add hot water at the time.

Do not refrigerate but put in a cool dark place and they should be fine for a few weeks providing they have been made in the correct conditions and aren't at all sticky when you finish. 😁

Hi. Thanks for getting in touch. You can use all sugar if you like (with water of course) but the glucose syrup helps the sugar to stabilise and stops it from crystallising so you will need to be very very careful 😬
