i've been using metal and bamboo steamers for years and use the metal ones for everything except buns and dumplings, those work better in a bamboo steamer because steam doesn't condense into water droplets on bamboo which can rain down on your buns or dumplings and make them soggy. metal steamers are also better for steaming meats and seafood which can contaminate a bamboo steamer and render it unwashable and unusable. my metal steamers are old and made from aluminum, back then stainless wasn't commonly used for steamers so that's what i have and i see no reason to replace them. my small one is 12" in diameter and gets the most use, my big one is 20" in diameter and is great because i can steam 4 large dungeness crabs at once in it and it fits on a propane turkey fryer burner.

Good choice! I've been using the same steamer for years with no complaints. On another subject, have you given any thought to distilling soju at home? I've been looking into it and it seems like you basically heat up a makgeolli batch and you get soju. Makgeolli and soju...the heart and soul of Korean alcohol? Would love it if you can branch off into tutorials for traditional Korean liquor.

I have a similar steamer. After my potstickers are done steaming, there’s grey like residue on the bottom of my potstickers n every time I wipe the steamer as well. Is that normal? Thank you!

I can only tell you what happens when I steam glutinous rice in a cloth. Even though the rice is washed well, some small rice particles end up in the water, so there is a small amount of rice residue on the steamer afterwards. So I clean it well afterwards. Hope that helps.

steam them with cheese cloth underneath the potstickers and that won’t happen and never store them in metal containers. Potatoes are the same way. Starch reacts to the metal. Store in glass container is best

Hello, how do I prevent mold forming in my steamer. I used vinegar, soap, boiling water, etc., and cleaned it, over several days. It got rid of most of the mold, but a lot came back. Am I missing something? I really don´t want to purchase a new one and have it happening all over. Thanks for any advice.

@@JeffRubidge Bamboo steamer. Bought it new, used it twice, washed it with a little soap and warm water, let it dry completely, my wife put it in the box I bought it in, and into the pantry. Two weeks later, covered in mold, bad smell, maybe even a spider web or two. So, should I wash it again differently, store it differently, or buy a metal one? Maybe the humidity is killing it, but I'm not going to move to a dryer climate.

@@Cukito4 that doesn't sound good. Mold spores are everywhere -- can't avoid them. They'll regrow if the environment is the same. Could try StarSan if you have it, leave in direct sunlight for a few days, completely dry, and leave in the open, see if mold regrows. But you might need to switch to stainless steel.

Hey Jeff, I have a similar stainless steel steamer. It seems that the rice on cheese cloth blocks the steam from getting through, how do you steam your rice, maybe a video on this. Thanks!

Even if the water is boiling, it does take a few minutes for the steam to build up and flow through through the rice. I don't start timing until I see steam coming out the vent on the lid. Since steam can power a locomotive, it won't be stopped by some cheesecloth and rice! I'll show some more detail in upcoming videos. Thanks for your comment! Happy brewing!
