I agree that bulk/batch cooking is a life saver! And thank you for sharing your recipes! I will definitely be trying the mushroom bean bake. I am always looking for yummy ways to get more mushrooms into my family's diet!

I am having a hard time with carbs. We have been vegan for 3 months now and we started it to reduce the amount of fat in our diet due to my husband's prostrate cancer. (I too am a survivor 5 years out.) Well, I was at my tap dance class after being away from it for 4 months and I saw myself in the mirror. Yep. Those hips were much larger than I liked. What am I doing wrong?

Hey Linda, thanks for your comment, and congrats on 3 months Vegan. What you are experiencing seems to be quite common, and has happened to many people, and then they ditch veganism. Don't dismay though, it doesn't have to be this way. It could be a number of things really, too many processed foods, processed carbs. Too much oil. Not enough veggies and fruits (eliminate dry fruits/juice). 😃 Have you read the Starch Solution, or the Maximum Weight loss books (the links are in my description)? These books are filled with practical advice and information about eating for health and weight loss. The 50/50 plate method really works wonders. @@WholeheartedVegan Hi: We don't eat processed foods. I mean, I guess tofu is processed but we only eat that now-and-then due to the type of breast cancer I had which was estrogen sensitive. Not to mention, it interferes with thyroid function if you have Hashimoto's, which I do. But, it's good for prostrate cancer so I make it. The oils we use are olive and avocado. We eat lots of fruits and veggies. I am thinking that the beans and lentils, which have protein, are also high in carbs. My only bright spot is my thyroid peroxidase antibodies went down 43 points but the globulin antibodies went up to 1000+! Lol! If it's not one thing, it's another. But, I will stay on track. We are managing our fat intake for Jim. Thanks for your channel. I am really glad I found you.🙂
