Thanks Marco! Here in Colorado we can get Elk meat pretty easy "if you know the right people." You are so right about NOT over cooking it. Medium rare is the best or it will turn a little gamey on you. I love this recipe and I will be trying it! I have some elk steaks in the freezer now! Your little ones are adorable and I too, do the "happy dance" when I'm about to eat something so delicious!

I just got back to Escondido last night with an elk I shot friday evening in Colorado. I tend to smoke my venison on my Traeger for for an hour before finishing in cast iron literally the same way but I dig the steak frites idea. Gonna try it very soon! Thanks for some great content. P.S., I'd volunteer some elk if you'd do a shredded elk Chilaquiles dish!
